1 1/4 cups green enchilada sauce

Number Of Ingredients 12

2-15 oz cans black beans ((drain one can, don't drain the other))
2 cloves garlic (minced)
2 teaspoons cumin
3 tablespoons olive oil
1-11.5 oz can tomato juice
salt (kosher or sea salt and pepper to taste)
1/4 cup chopped cilantro
1/2 cup olive oil
12 cloves garlic (about 1/3 cup chopped garlic)
1/2 cup ground cumin
12-15 oz cans of black beans (drain 6 cans, do not drain 6 cans)
60-70 oz tomato juice (about 1 1/2 46 oz. cans)

Steps:

  • In a non stick pan, cook garlic, cumin and olive oil over medium heat until fragrance is released, about one minute. Be careful not to burn garlic.
  • Add beans, cook down for about 5 minutes until some of the liquid from the beans is absorbed and evaporated.
  • Add can of tomato juice and seasoning to taste.
  • Stir in chopped cilantro when ready to serve.
  • Place oil in large pot.
  • Add garlic and cumin, cook over medium heat until fragrance is released, about one to two minutes.
  • Add black beans and tomato juice and salt to taste. Cook until mixture is heated through on medium heat.
  • When mixture has cooked 20- 30 minutes, turn off heat and add chopped cilantro.
  • Cool and store in refrigerator until ready to serve.
  • When ready to serve, heat slowly on medium heat, stirring gently to avoid burning beans at bottom of pan. Add more tomato juice if needed.
  • This may be made and stored up to five days before serving.

4 (28 ounce) cans diced tomatoes
2 pounds lean ground beef
2 pounds chorizo sausage
2 tablespoons olive oil
2 large onions, chopped
3 cloves garlic, minced
3 tablespoons ground cumin
2 tablespoons chili powder
2 tablespoons lime juice
1 tablespoon salt
1 teaspoon ground black pepper
2 (15.5 ounce) cans black beans, rinsed and drained
1 (15.5 ounce) can pinto beans, rinsed and drained
1 (15.5 ounce) can small red kidney beans, rinsed and drained
1 large green bell pepper, chopped
1 large red bell pepper, chopped
1 large yellow bell pepper, chopped
14 ⅜ ounces frozen corn
1 dash hot sauce (such as Frank's RedHot ®), or more to taste
¼ cup chopped fresh cilantro, or more to taste

Steps:

  • Pour tomatoes into a large stockpot over medium heat.
  • Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Transfer beef to the stockpot.
  • Cook and stir chorizo in the same hot skillet over medium-high heat until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Transfer chorizo to the stockpot.
  • Heat oil in the same skillet over medium-high heat. Saute onions and garlic until very well cooked and translucent, 7 to 10 minutes. Add cumin and chili powder and cook for about 3 minutes more. Transfer onions to the stockpot with lime juice, salt, and black pepper. Stir black beans, pinto beans, and kidney beans into the pot.
  • Heat the skillet over medium-high heat and lightly saute bell peppers, about 5 minutes. Add to the stockpot.
  • Add corn to the stockpot and season with additional salt and pepper. Add hot sauce to taste and simmer for 30 minutes more. Sprinkle cilantro on top and serve.

The one dish everyone requests for potlucks, family gatherings or just a warm week night dinner. I'm not a big Chili fan, but these are the best and In under 30 minutes makes this quick warm and definite comfort food.

1 (15 ounce) can ranch-style beans with jalapenos
2 (15 ounce) cans tomato sauce
1/8 teaspoon onion salt
1 teaspoon new mexico chile powder
1/2 teaspoon black pepper, divided
1/4 teaspoon all purpose seasoning (Ravens or Lawrys)
monterey jack and cheddar cheese blend
chopped onion
jalapeno, slices

Steps:

  • On Medium high heat brown ground beef in a skillet or dutch oven.
  • Add 1/4 tsp blk pepper and the onion salt with seasoned salt. Drain.
