CAJUN CRAB CAKES (NO BREADCRUMBS)

Cajun Crab Cakes (No Breadcrumbs) image

Two of the most crucial ingredients used in New Orleans cooking are Cajun spice and local seafood! Crab has always been my favorite type of shellfish, but I have never really cared much for crab cakes. The overpowering presence of seasoned breadcrumbs used in most recipes interferes with the sweet and delicate flavors of the fresh lump crabmeat. After years of experimenting with many of New Orleans' most famous crab cake recipes, I have created a flavorful, mouth-watering, delicious piece of work! The key is to use a small amount of crumbled crackers instead of breadcrumbs. I hope you enjoy!

Yield 6

Number Of Ingredients 23

2 tablespoons salted butter
½ onion, finely chopped
2 stalks celery, finely chopped
½ large red bell pepper, finely chopped
1 bunch green onions (green portion only), chopped
½ large carrot, finely chopped
3 cloves garlic, minced
1 tablespoon parsley flakes
2 teaspoons Creole seasoning (such as Tony Chachere's®)
2 teaspoons dried basil
2 teaspoons ground black pepper
1 teaspoon dried dill weed
½ teaspoon oregano
½ teaspoon dried thyme
2 large eggs, beaten
1 pound lump crabmeat, picked free of shell
9 buttery crackers (such as Keebler Club® crackers), crushed
3 tablespoons vegetable oil
1 cup mayonnaise
1 tablespoon chile-garlic sauce (such as Sriracha®)
2 teaspoons Creole seasoning (such as Tony Chachere's®)
2 teaspoons parsley flakes
1 teaspoon paprika

Steps:

  • Melt butter in a large, heavy skillet over medium heat. Stir in onion; cook and stir until the onion has softened and turned translucent, about 5 minutes.
  • Stir in the celery, bell pepper, green onion, carrot, and garlic. Continue to cook and stir until vegetables are tender, about 10 minutes more.
  • Season with 1 tablespoon parsley flakes, 2 teaspoons Creole seasoning, basil, pepper, dill weed, oregano, and thyme. Cook and stir until fragrant, 5 minutes more.
  • Transfer cooked vegetables to a large bowl; allow to cool for about 10 minutes. Set skillet aside for later use.
  • Stir the beaten eggs into the vegetables. Mix in the crabmeat and cracker crumbs with your hands, making sure not to break up the chunks of crab too much.
  • Shape the crab mixture into 12 small cakes.
  • Heat vegetable oil in the skillet over medium high heat.
  • Pan-fry the crab cakes in batches until golden brown on each side, about 3 minutes.
  • To make dipping sauce: Whisk together the mayonnaise, chile-garlic sauce, 2 teaspoon Creole seasoning, 2 teaspoon parsley flakes, and paprika.

CAJUN POPCORN (BATTER-FRIED CRAWFISH)

Cajun Popcorn (Batter-Fried Crawfish) image

Cajun popcorn is an irresistible appetizer made with deep-fried crawfish. Paul Prudhomme, the chef and owner of K-Paul's Restaurant in New Orleans, shared this recipe in 1983 with Craig Claiborne. It was featured in a menu for an economic summit held in Williamsburg, Va. Mr. Claiborne created three days of meal programming that he hoped would display the geographic and gastronomic diversity of the United States. If crawfish is not readily available where you live, look for frozen crawfish tails online.

Time 1h30m

Yield 4 to 8 servings

Number Of Ingredients 16

2 pounds crawfish tails, peeled, or very small shrimp, peeled and deveined
2 eggs, well beaten
1 1/4 cups milk
1/2 cup corn flour (see note)
1/2 cup all-purpose flour
1 teaspoon sugar
Salt to taste if desired
1/2 teaspoon granulated garlic
1/2 teaspoon granulated onion
1 teaspoon finely ground white pepper
1/8 teaspoon finely ground black pepper
1/2 teaspoon cayenne pepper
1/4 teaspoon dried thyme leaves
1/8 teaspoon pulverized ground bay leaves
Oil for deep frying
Garlic mayonnaise

Steps:

  • Prepare the crawfish or shrimp and set aside.
  • Blend eggs and milk; beat well.
  • In a large bowl, combine the corn flour and all-purpose flour, sugar, salt, garlic, onion, peppers, thyme and bay leaves. Blend well. Gradually add the milk mixture, stirring well with a whisk. Let stand one hour at room temperature.
  • Heat one inch of oil in a black iron skillet or use a deep-fat fryer. It is important that the oil be heated to a temperature as close to 370 degrees as possible. Coat the seafood with batter and drop it a few pieces at a time in the hot fat. This will be done in several batches. Cook, stirring occasionally, until golden brown all over, about two minutes total cooking time.
  • As the food is cooked, drain well of paper towels. Serve with garlic mayonnaise on the side.

Tips:

  • Choose Fresh Crawfish: Use live or fresh crawfish for the best flavor and texture. Frozen crawfish can also be used, but make sure to thaw them properly before cooking.
  • Properly Clean the Crawfish: Remove the heads, tails, and shells from the crawfish. Rinse the crawfish thoroughly under running water to remove any grit or dirt.
  • Season the Crawfish Well: Use a flavorful blend of seasonings to enhance the taste of the crawfish. Cajun seasoning, garlic, paprika, onion powder, and cayenne pepper are commonly used.
  • Don't Overcook the Crawfish: Crawfish cooks quickly, so be careful not to overcook it. Overcooked crawfish will become tough and rubbery.
  • Use a Good Quality Breadcrumb Mixture: The breadcrumb mixture helps to bind the crawfish patties together and adds texture. Use a combination of fresh breadcrumbs, panko breadcrumbs, and seasonings.
  • Fry the Crawfish Patties in Hot Oil: Heat the oil to a high temperature before frying the crawfish patties. This will help to create a crispy outer crust and prevent the patties from absorbing too much oil.

Conclusion:

Cajun crawfish patties are a delicious and versatile dish that can be enjoyed as an appetizer, main course, or even a po'boy sandwich filling. With their crispy outer crust and tender, flavorful filling, these patties are sure to be a hit at your next gathering. Experiment with different seasonings and side dishes to create your own unique take on this classic Cajun dish.
