1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry

4 red potatoes, quartered
2 pieces corn, quartered
2 tablespoons oil, divided
1 tablespoon butter, cubed
4 cloves garlic, minced
2 teaspoons garlic powder
2 ½ teaspoons paprika
1 ¼ teaspoons dried oregano
1 teaspoon onion powder
1 ¼ teaspoons dried thyme
½ teaspoon red pepper flakes
1 teaspoon cayenne pepper
2 teaspoons salt
1 teaspoon pepper
fresh parsley, chopped
lemon wedge, to garnish

  • Preheat oven to 375°F (190°C).

1/2 tablespoon canola oil
Old Bay Seasoning (to taste)
cajun seasoning (to taste) or creole seasoning (to taste)
salt and fresh cracked black pepper
1 (8 ounce) package cream cheese
1/3-1/2 cup mayonnaise
2 tablespoons grated onions
1 tablespoon lemon juice
2 dashes hot sauce, to taste
1 teaspoon cajun seasoning (to taste) or 1 teaspoon creole seasoning (to taste)

Steps:
