1 tablespoon olive oil
8 ounces bacon, cooked and cubed
1 ½ cups chopped onion
¼ cup chopped green bell pepper
1 tablespoon minced garlic
4 bay leaves
6 ounces sliced andouille sausage
1 small smoked ham hock
2 cups dry kidney beans, soaked overnight
1 teaspoon Cajun seasoning
1 teaspoon Worcestershire sauce
8 cups chicken broth
1 teaspoon salt
1 ½ cups cooked rice
6 tablespoons thinly sliced green onion

Steps:

  • In a large pot over high heat, heat the oil. Add the bacon and saute for 2 minutes. Add the onions, bell pepper, garlic, bay leaves, sausage and ham hock and saute for 2 more minutes.
  • Add the beans and saute for 2 more minutes. Stir in the Cajun-style seasoning, Worcestershire sauce and stock. Bring to a boil, reduce heat to low and simmer for 1 hour, stirring occasionally.
  • Add the salt, cover the pot and simmer for an additional 15 minutes. Turn off the heat and allow the pot to sit, covered, for about 20 minutes. Discard the ham hock.
  • Ladle soup into individual bowls. Top each serving with 1/4 cup rice and 1 tablespoon green onion.

8 ounces great northern beans
water, to cover beans
5 cups water
2 cups canned tomatoes, cut up or 16 ounces canned tomatoes
1 cup ham, meaty bone or 1 cup smoked pork hock
1 large onion, chopped
1/2 cup green pepper, chopped
1/2 cup celery, chopped
2 garlic cloves, minced
1/4 teaspoon fresh ground black pepper
1/4 teaspoon bottled hot pepper sauce
1/4 teaspoon salt

Steps:

  • Put rinsed beans, in a 4 quart dutch oven and cover beans with water. Bring to a boil, reduce heat, simmer beans, uncovered for 2 minutes. Remove from heat, cover and let stand for 1 - 2 hours. Drain beans and re-rinse.
  • Place the beans, water, undrained tomatoes, ham bone, onion, green peppers, celery, garlic and pepper back into same dutch oven. Bring to a boil, reduce heat, cover and simmer for 3 hours or until beans are tender.
  • Remove ham bone, when cool, cut meat from bone and return to soup and heat through. Stir in the hot pepper sauce, taste and season with salt.

1-1/2 cups dried beans (mix of black beans, navy beans , kidney beans, and/or split peas)
1 tbs dried parsley
1 tsp cayenne pepper
1 tsp cumin
1 tsp oregano
7 cups low salt chicken broth
bay leaf
2 medium carrots, diced
3 ribs celery, chopped
1 medium yellow onion, diced
1 red pepper, chopped small
2 cloves garlic, chopped
1 28 oz can diced tomatoes
Andouille sausage (2 lengths) cut into ¼" pieces
additional chili powder to taste
salt & pepper to taste

Steps:

  • Rinse and inspect beans. Place beans, parsley, cayenne, cumin, oregano, and bay leaf in large stock pot. Add enough chicken broth to cover by 1" or so. Bring mixture to boil, stir, reduce to simmer and simmer covered for 1 hour. In the meantime, sauté carrots, celery, onion, red pepper, and garlic until soft. Add to soup, stir and return to simmer. During second hour, add Andouille sausage and canned tomatoes, stirring to incorporate fully. Simmer partially covered for another hour, adding additional chicken broth if needed. Soup should be thick. After 2-3 hours of total simmering time, test spices and add chili powder and additional salt & pepper to taste. Serve with hearty bread, rolls or corn bread to help balance spice.

2 slices bacon, diced
1 medium carrot, chopped
1 celery rib, chopped
1 medium green pepper, chopped
3 garlic cloves, minced
1/4 lb tasso ham, diced (If this is not available diced ham pieces can be used.)
1/2 lb smoked sausage, cut crosswise into 1/4-inch slices
2 (14 1/2 ounce) cans navy beans
1 cup chicken broth
4 tablespoons dried onion, minced
1 medium jalapeno, seeded and minced
1 (14 1/2 ounce) can diced tomatoes
1 tablespoon cajun seasoning
Tabasco sauce, to taste
salt and pepper, to taste
1 cup brown rice
green onion, sliced

Steps:

  • Heat a heavy dutch oven over medium high heat. When hot add in the diced bacon and render out the fat. Add in the carrot, celery, green pepper and garlic. Cook, stirring frequently until vegetables are wilted and crisp tender. Add the ham and smoked sausage. Cook until the meat begins to brown.
