2 tablespoons bacon drippings or 2 tablespoons olive oil
1/4 cup onion, diced
1/4 cup green sweet pepper, diced
1 lb russet potato, thinly sliced
3/4 lb sweet potato, peeled and thinly sliced
2 tablespoons water
1 teaspoon seasoning salt (I like a cajun seasoned salt)
1 lb smoked sausage, cut into 1-inch slices

Steps:

  • Add the bacon drippings or olive oil to a large skillet. Preheat over medium heat until the drippings or oil is just hot. Add the diced onion and diced green sweet pepper. Cook the onion and pepper until they're tender.
  • Add the unpeeled, sliced russet potatoes, the sliced sweet potatoes and water to the vegetables in the skillet. If adding sausage, stir it in now. Sprinkle the mixture with the seasoning or seasoned salt.

2 cups chopped deli rotisserie chicken (from 2- to 2 1/2-lb chicken)
1 cup shredded Cheddar cheese (4 oz)
2 medium green onions, chopped (2 tablespoons)

One time when we went to Silver Dollar City they had something similar to this there, but it had sausage in it. I came up with my version minus the sausage to be used as a side dish.

2 large sweet potatoes
2 or 3 large baking potatoes (you want about an equal amount of each type of potato)
1 med or large green pepper/red pepper
1 large sweet onion
1 stick butter or marjarine
4 tsp salt (more if needed)
1 tsp pepper

Steps:

  • 1. Peel all potatoes. In large pan fitted with a lid, melt the stick of butter/marjarine on low heat. While butter is melting, cut all potatoes into chunks (whatever your size preference, but the larger the longer to cook).
  • 2. Add potatoes to melted butter and mix well to coat. Cut peppers and onion into chunks as well and add to potatoes. Again, mix to coat.
  • 3. Cover pot over med/low heat to prevent scorching and stir occasionally. Test for tenderness of potatoes. Remove lid when tender to brown slightly if you wish.

2 large redskin potatoes
2 large yellow (yukon gold) potatoes
2 large carrots,chunked
2 large stalks of celery, cut up
2 c water
1 tsp garlic powder
1 tsp parsley flakes
4 Tbsp butter, melted
1 c velveeta cheese shreds (optional)
2 Tbsp real bacon bits (optional)
1/4 c helman's mayonaise (optional)
salt and pepper to taste
