CANCUN CHICKEN
Great summer recipe with grilled vegetables and even some grilled pineapple even if the main dish is on the stove top! This calls for ground cloves but I think I would like ginger a little better. Use your idea to flavor the meat! I used canned pineapple in place of the fresh. I got this recipe from a cookbook called "Favorite Brand Name Cookbook".

Tips:
- Use a flavorful marinade: The marinade is what gives Cancun chicken its signature taste, so don't skimp on the ingredients. A good marinade will include citrus juices, herbs, spices, and a touch of sweetness.
- Grill the chicken over medium heat: This will help to prevent the chicken from drying out. If you're using a charcoal grill, let the coals burn down until they're nice and hot before you start grilling the chicken.
- Don't overcrowd the grill: If you overcrowd the grill, the chicken won't cook evenly. Leave some space between each piece of chicken so that the air can circulate and the chicken can cook evenly.
- Cook the chicken until it's cooked through: The best way to tell if the chicken is cooked through is to use a meat thermometer. The internal temperature of the chicken should be 165 degrees Fahrenheit.
- Let the chicken rest before serving: This will help the juices to redistribute throughout the chicken, making it more tender and flavorful.
Conclusion:
Cancun chicken is a delicious and easy-to-make dish that's perfect for a summer cookout. With its flavorful marinade and juicy, tender meat, Cancun chicken is sure to be a hit with your family and friends. So next time you're looking for a new chicken recipe to try, give Cancun chicken a try. You won't be disappointed!
