CANDIED JALAPENOS - COWBOY CANDY RECIPE - (4.5/5)

Candied Jalapenos - Cowboy Candy Recipe - (4.5/5) image

Provided by JimMac

Number Of Ingredients 10

4 pounds fresh jalepeno peppers, sliced
2 pounds onions, diced
1/2 cup vinegar
1/2 cup water
6 to 8 cups sugar
2 tablespoons mustard seed
1 teaspoon turmeric
2 teaspoon celery seed (optional)
1 tablespoon garlic powder
1 teaspoon ginger

Steps:

  • Slice Jalapenos into thin slices and dice onions. (Wear a pair of rubber gloves for handling jalapenos, personal experience, do not touch your face!) Place in pan with water and vinegar, bring to a boil, cover, reduce heat and simmer about 10 minutes or until tender. (Do not breath fumes.) Add the sugar and spices and bring to soft candy temperature to completely dissolve sugar, about another 10 minutes. Place boiling mixture into jars, leaving 1/4 inch head space. Adjust caps. Seal in a canner, or store in your refrigerator. Best to let them sit in the jars at least two weeks to soak up all of the goodness.

Tips:

  • Choose the right peppers: Select firm, fresh jalapeños with smooth skin and no blemishes. Avoid peppers that are bruised or have soft spots.
  • Wear gloves when handling peppers: Capsaicin, the compound that gives peppers their heat, can irritate your skin. Wear gloves to protect your hands when cutting, seeding, and handling the peppers.
  • Remove the seeds and ribs to reduce heat: If you prefer milder candied jalapeños, remove the seeds and ribs before candying them. This will help to reduce the heat level.
  • Use a candy thermometer to ensure the perfect consistency: A candy thermometer will help you to ensure that the sugar syrup reaches the correct temperature for candying the jalapeños. The ideal temperature is between 215°F and 220°F (102°C and 104°C).
  • Allow the candied jalapeños to cool completely before storing: Once the candied jalapeños are cooked, allow them to cool completely before storing them. This will help to prevent the sugar syrup from crystallizing.

Conclusion:

Candied jalapeños are a delicious and versatile treat that can be enjoyed in a variety of ways. They can be eaten on their own as a snack, used as a topping for salads, pizzas, and tacos, or added to sandwiches and wraps. They also make a great gift for friends and family who love spicy food. With a little time and effort, you can easily make your own candied jalapeños at home using the recipes provided in this article.
