1/2 cup pearl barley (cook in 1.5 cups water for 1.5 cups cooked barley)
2 cups chopped parsley leaves
1 large tomato (seeds removed and diced)
1/2 long English cucumber (remove soft seed center, cut into small dice)
1/8-1/4 cup mint leaves (chopped)
2 green onions (sliced)
1/4 cup olive oil
1 garlic clove (grated or pressed)
1-2 tablespoons lemon/lime juice
1/2 teaspoon salt
1/8 teaspoon black pepper
1 pinch allspice

Steps:

  • In a saucepan stir together 1/2 cup pearl barley and 1.5 cups water. Bring to a boil. Then reduce heat and simmer for about 15 minutes until barley is tender. Drain and rinse cooked barley with cold water.
  • To a salad bowl add the 1.5 cups cooked and cooled barley. Add 2 cups of chopped parsley, 1 large diced tomato, 1/2 small diced cucumber, 1/8-1/4 cup mint leaves, chopped, and 2 sliced green onions.

3 cups water
½ teaspoon salt
½ cup barley
1 large mango, peeled and diced, divided
3 tablespoons lime juice
2 tablespoons olive oil
½ teaspoon ground cumin
½ teaspoon salt
1 ½ cups cooked black beans
1 cup grape tomatoes, halved
½ cup diced red onion
¼ cup chopped fresh cilantro
1 tablespoon minced jalapeno pepper

Steps:

  • Bring water and 1/2 teaspoon salt to a boil in a saucepan. Add barley; cover and simmer until tender yet firm to the bite, about 20 minutes. Drain any excess cooking liquid and let cool completely, 20 to 30 minutes.
