6 to 7 tablespoons harissa sauce
3 tablespoons extra-virgin olive oil
Kosher salt
16 large baby-cut carrots (about 2 inches each)
All-purpose flour, for dusting
One 7-ounce sheet all-butter puff pastry (half of a 14-ounce box, such as Dufour), thawed
1 large egg yolk
1 cup plain whole-milk Greek yogurt
1 teaspoon finely grated lemon zest
1 tablespoon fresh lemon juice
1 teaspoon finely chopped tarragon leaves
1 tablespoon roughly chopped mint leaves

Steps:

  • Position a rack in the center of the oven and preheat to 400 degrees F. Line a baking sheet with parchment.
  • Stir to combine 2 tablespoons of the harissa with 1 tablespoon of the olive oil, 3/4 teaspoon salt and the carrots in a medium bowl. Stir until the carrots are evenly coated.
  • On a lightly floured surface, roll out the puff pastry to a 9-by-12-inch rectangle and brush with 2 to 3 tablespoons of the harissa.
