This is a super easy chicken recipe that uses bottled Catalina (sometimes called California French) salad dressing. I use Kraft reduced fat Catalina.

4 boneless skinless chicken breasts
8 ounces reduced-fat catalina dressing
1/4 cup finely chopped onion
1 teaspoon Worcestershire sauce
3 tablespoons brown sugar
salt and pepper, to taste

Steps:

  • Preheat oven to 350.
  • Lightly grease/spray a 13" x 9" baking dish.
  • Place chicken in prepared baking dish.
  • In a bowl, combine Catalina dressing, onions, worcestershire sauce, and brown sugar; mix very well.

8 oz catalina salad dressing
1 pkg onion soup mix
1/3 c apricot jam
8 boneless, skinless chicken breasts

Steps:

  • 1. Preheat oven to 375°.
  • 2. Mix together the Catalina dressing, onion soup mix, and apricot jam. Stir to blend well; set aside.
  • 3. Use a meat mallet to pound the thawed (if previously frozen) chicken breasts. This allows for uniformity in thickness for better cooking, and also makes the breasts very tender and delicious.
  • 4. Arrange chicken breasts - touching - in an ungreased 13 x 9" baking pan. Pour dressing mixture over all chicken. Bake for approx. 30 minutes, until juices run clear, and the breasts have a nice 'glazed' appearance.
