Tips:
- To ensure the catfish is cooked evenly, use a meat thermometer to check that the internal temperature has reached 145°F (63°C).
- If you don't have a meat thermometer, you can check if the catfish is cooked by gently flaking it with a fork. If the fish flakes easily, it is cooked.
- For a crispy crust on the catfish, make sure to pat it dry before coating it in the breading mixture.
- To prevent the stuffing from becoming dry, add a little bit of moisture, such as white wine or chicken broth.
- Feel free to experiment with different types of mushrooms and spinach in the stuffing. Some good options include shiitake mushrooms, cremini mushrooms, and baby spinach.
Conclusion:
This catfish with mushroom and spinach stuffing is a delicious and easy-to-make meal that is perfect for a weeknight dinner. The catfish is flaky and moist, the stuffing is savory and flavorful, and the creamy sauce brings it all together. Serve with your favorite sides, such as mashed potatoes, roasted vegetables, or rice.
