Steps:

  • 1.Place the bacon in a large skillet over medium heat. Fry until browned, then remove to paper towels to drain. Add the butter to the bacon grease. When the butter begins to sizzle, sprinkle 3 tablespoons of flour over it. Reduce the heat to medium-low, and cook for about 12 minutes, stirring frequently, until dark brown. Don't let it scorch - if it starts to, just reduce the heat. 2.When the roux reaches dark brown, increase the heat to medium-high, and add the onions and bell pepper. 2 cups half-and-half
2 pounds uncooked shrimp, peeled and deveined

1 pinch cayenne pepper, or to taste
1 lemon, juiced
1 pound andouille sausage, cut into 1/4-inch slices
5 slices bacon
1 medium green bell pepper, chopped
1 medium red bell pepper, chopped
1 medium yellow bell pepper, chopped
1 cup chopped onion
1 teaspoon minced garlic
¼ cup butter
¼ cup all-purpose flour
1 cup chicken broth
1 tablespoon Worcestershire sauce

1 lemon, juice of
Tabasco sauce
1 1/2 teaspoons salt
1 1/2 cups stone ground corn grits (not instant or quick-cooking)
6 slices bacon, chopped
1 small onion, finely chopped
1/4 cup finely chopped green bell pepper
1 -2 garlic clove, minced
1/2 cup thinly sliced scallion
2 tablespoons unbleached all-purpose flour
1 cup chicken stock
1 -2 tablespoon unsalted butter
1 cup grated cheddar cheese

  • Combine shrimp with lemon juice and a couple of generous splashes of Tabasco sauce; let sit while you begin the grits and gravy.
