BEST ONE POT CHEESE AND MACARONI

Best One Pot Cheese and Macaroni image

This recipe uses less milk and no thickener what-so-ever! Very cheesy, too! You can either serve it from the pot, or top with buttered crumbs and put in 350 oven to brown for half an hour, but we like ours fine without.

Time 30m

Yield 6

Number Of Ingredients 8

3 cups water
½ teaspoon salt
8 ounces seashell pasta
1 cup whole milk
4 cups shredded Cheddar cheese
1 cup shredded Parmesan cheese
¼ teaspoon ground black pepper
1 teaspoon Dijon mustard

Steps:

  • Pour water and salt into a medium pot and bring to a rolling boil over high heat. Once the water is boiling, stir in the shell pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the water has cooked down a bit, about 5 minutes.
  • Stir in the milk, and continue boiling for another 5 minutes. Add the Cheddar, Parmesan, pepper, and mustard; stir until the cheese melts and the sauce is thick and creamy. The starch from the pasta thickens the sauce as the pasta cooks.

INSTANT POT CREAMY GOAT CHEESE PASTA

Instant Pot Creamy Goat Cheese Pasta image

Inspired by the baked feta pasta that took the internet by storm, this recipe is similarly easy but uses creamy goat cheese and comes together in a fraction of the time, thanks to the Instant Pot®! We opted for a short, tubular pasta for this dish to capture a bit of the creamy sauce inside each piece. Top with a sprinkle of fresh basil and you have a bright and flavorful dish you'll want to make year-round.

Categories     main-dish

Time 35m

Yield 4 to 6 servings

Number Of Ingredients 10

1 pound penne pasta
2 pints (20 ounces) cherry tomatoes
2 1/2 cups low-sodium vegetable broth
1/4 cup olive oil
1 teaspoon dried oregano
Pinch crushed red pepper flakes
4 cloves garlic, thinly sliced
Kosher salt
One 8-ounce log goat cheese
1/3 cup lightly packed fresh basil leaves, roughly chopped

Steps:

  • Add the penne, cherry tomatoes, vegetable broth, olive oil, oregano, crushed red pepper flakes, garlic and 2 teaspoons salt to a 6-quart Instant Pot®. Stir to evenly combine; it's ok if not all of the pasta and tomatoes are fully submerged in the liquid. Place the log of goat cheese on top and in the center of the bowl.
  • Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high for 5 minutes. After the pressure-cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick-release cycle is complete. Being careful of any remaining steam, unlock and remove the lid.
  • Stir the pasta together until the tomatoes have all been crushed and the cheese is thoroughly integrated into the sauce. Spoon into serving bowls and top with the basil.

¼ cup butter
1 clove garlic, crushed
½ cup cubed sharp Cheddar cheese
½ cup cubed Gouda cheese
¼ cup grated Parmesan cheese
¼ cup blue cheese dressing

INSTANT POT® PHILLY CHEESESTEAK PASTA

Instant Pot® Philly Cheesesteak Pasta image

Pasta topped with a silky cheese sauce and all the goodness of Philly cheesesteak toppings. Pay attention to the thickness of the sirloin--you'll want it thinner than skirt steak (I buy mine at Aldi). You'll want to go to the deli to get the cheese--I buy mine in a small thick-cut 1/2-lb piece and shred it at home.

Time 55m

Yield 4

Number Of Ingredients 15

2 tablespoons salted butter, divided
1 tablespoon olive oil
2 cups frozen bell pepper and onion mix, thawed
9 ounces boneless beef sirloin steak, thinly sliced
½ cup beef broth
3 cups bow-tie pasta
1 tablespoon all-purpose flour
½ cup milk
1 ½ cups shredded American cheese
salt and freshly ground black pepper to taste
½ cup sliced fresh mushrooms
1 teaspoon Worcestershire sauce
1 teaspoon granulated garlic
1 teaspoon seasoned salt
¼ teaspoon black pepper

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add 1 tablespoon butter, olive oil, bell pepper blend, and beef; saute until beef is browned, about 5 minutes. Pour in broth, scraping up any browned bits from the bottom of the pot.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 8 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 15 minutes.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Cook bow-tie pasta at a boil, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain pasta.
  • Melt remaining 1 tablespoon butter in a saucepan. Add flour, stirring to create a paste. Pour in milk, stirring constantly to keep from scorching. Allow sauce to thicken slightly. Add shredded American cheese and stir until well combined. Season cheese sauce with salt and pepper.
  • Release any remaining pressure using the quick-release method. Unlock and remove the lid. Add sliced mushrooms, Worcestershire sauce, garlic, seasoned salt, and pepper. Adjust seasonings to taste. Serve beef mixture on top of the cooked farfalle, and top with the cheese sauce.
