1 (8 oz) package cream cheese, softened
6 tablespoons unsalted butter, softened
1/4 teaspoon vanilla
3/4 cup powdered sugar
2 tablespoons brown sugar
2/3 cup mini chocolate chips
3/4 cup finely chopped pecans (toasted, if desired)
Graham crackers and sliced apples, for serving
1 (8 oz) package cream cheese, softened
8 ounces goat cheese
2 tablespoons finely chopped scallions
2 tablespoons unsalted butter, softened
2 teaspoons fresh lemon juice
1/4 teaspoon hot sauce
1 dash Worcestershire sauce
Pinch of salt and pepper
1/3 cup chopped fresh parsley
Crackers and sliced vegetables, for serving
1 (8 oz) package cream cheese, softened
3/4 cup finely shredded sharp cheddar cheese
2 tablespoons finely chopped scallions
1 tablespoon prepared horseradish
1 tablespoon chopped fresh parsley
1 1/2 teaspoons Worcestershire sauce
Pinch of salt and pepper
2 slices cooked bacon, cooled and crumbled
1/4 cup toasted chopped walnuts
2 tablespoons diced pimientos
Crackers and sliced vegetables, for serving

Steps:

  • In a large bowl or bowl of a stand mixer, beat cream cheese, butter and vanilla until smooth. Gradually beat in sugars. Stir in chocolate chips. Use wet hands to shape mixture into a ball and cover tightly in plastic wrap. Chill at least 4 hours to set. Just before serving, roll cheese ball in chopped pecans. Serve with graham crackers, sliced apples, etc.
  • In a large bowl or bowl of a stand mixer, beat all ingredients except parsley just until combined. Use wet hands to shape mixture into a ball and cover tightly with plastic wrap. Chill at least 4 hours to set. Just before serving, roll cheese ball in chopped parsley. Serve with crackers, sliced vegetables, etc.
  • In a large bowl or bowl of a stand mixer, beat all ingredients except bacon, walnuts and pimientos just until combined. Use wet hands to shape mixture into a ball and cover tightly with plastic wrap. Chill at least 4 hours to set. Just before serving, in a small bowl combine bacon, walnuts and pimientos. Roll cheese ball in bacon-walnut-pimiento mixture. Serve with crackers, sliced vegetables, etc.

3 packages cream cheese (8 ounces each)
2 tablespoons fresh lemon juice
1/2 teaspoon Worcestershire sauce
5 dashes hot sauce (such as Tabasco)
1/2 teaspoon coarse salt
1/4 teaspoon freshly ground white pepper
8 ounces sharp orange cheddar cheese, finely shredded
2 tablespoons store-bought chutney
3/4 cup dried cranberries, finely chopped
Water crackers, for serving
6 ounces Roquefort cheese
1 shallot, minced (about 1 tablespoon)
2 teaspoons brandy (optional)
1 cup toasted walnuts, coarsely chopped
Vegetable chips (such as Terra Chips Sweets & Beets), for serving
8 ounces goat cheese
2 tablespoons finely chopped scallions
1/3 cup fresh curly-leaf parsley, finely chopped
1 English cucumber, cut into 1/8-inch-thick slices, for serving

Steps:

  • Put butter, cream cheese, lemon juice, Worcestershire sauce, hot sauce, salt, and pepper into the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until combined. Divide equally among 3 medium bowls.
  • Stir cheddar cheese and chutney with base mixture in the first bowl. Form into a ball. Roll cheese ball in cranberries to coat before serving. Serve with crackers.
  • Stir blue cheese and shallot with base mixture in second bowl; add brandy, if desired. Form into a ball. Roll in walnuts to coat before serving. Serve with chips.
  • Stir goat cheese and scallions with base mixture in remaining bowl. Form into a ball. Roll in parsley to coat before serving. Serve with cucumber slices.

3 (8 ounce) blocks cream cheese, room temperature
2 tablespoons lemon juice
5 dashes hot sauce
1/2 teaspoon kosher salt
1/3 cheese ball base
8 ounces finely shredded cranberry sharp cheddar cheese (regular sharp can be used as well)
2 tablespoons whole berry cranberry sauce
1/3 cheese ball base (recipe above)
6 ounces gorgonzola cheese
1 shallot, minced
1 teaspoon finely chopped rosemary
2 teaspoons white wine
1 cup toasted walnuts, chopped
1/3 cheese ball base (recipe above)
6 ounces soft Brie cheese
1 Granny Smith apples, peeled, cored and cut into small cubes
1 teaspoon fresh thyme leaves
1 cup toasted pecans, chopped

Steps:

  • For cheese ball base: Add all ingredients to the bowl of an electric mixer and mix together until smooth. Equally divide mixture into three portions and move each portion to a small bowl. For cranberry and sharp cheese ball: Mix together cheese ball base, shredded cheese and cranberry sauce. Once combined shape into a ball and place in the refrigerator. Refrigerate until ready to serve. Serve with crackers, fruit slices, vegetables, vegetable chips or pita chips. For walnut and Gorgonzola cheese ball: Mix together cheese ball base, gorgonzola cheese, shallot, rosemary and white wine. Once combined shape into a ball and place in the refrigerator. 8 ounces orange sharp cheddar cheese, finely shredded
2 tablespoons chutney (I used bottled mango chutney from grocery store)
3/4 cup dried cranberries, finely chopped

1 shallot, minced
2 teaspoons brandy (optional)
1 cup toasted walnuts, coarsely chopped
8 ounces goat cheese
2 tablespoons finely chopped scallions

1 package (8 ounces) cream cheese, softened
4 cups shredded cheddar cheese, room temperature
2 tablespoons 2% milk
