Petite deep fried cheese sandwiches that were served in the King's Food Host restaurants in Omaha and Lincoln Nebraska. I got this recipe from a friend of mine who worked at King's in the 1960's.

6 slices American cheese
6 slices white bread
mayonnaise
1 egg
1/2 cup milk
3/4 cup flour
1 teaspoon salt
corn flake crumbs, crushed fine
oil (for deep frying)

Steps:

  • Prepare 3 sandwiches, using mayonnaise and 2 slices of cheese for each. Cut the crusts off the sandwiches. Cut each sandwich diagonally both ways, making 4 triangles.
  • Combine egg, milk, flour and salt.
  • Dip each triangle into egg mixture and then coat with the corn flake crumbs.
  • Deep fry at 375°F until golden brown.

50 Ritz crackers, (pulsed in a food processor to make coarse crumbs)
2/3 cup milk
2 large eggs
1/2 cup mayonnaise
8 slices hearty white sandwich bread
6 slices American cheese
Vegetable oil

Steps:

  • Line a rimmed baking sheet with parchment paper.
  • Place the Ritz cracker crumbs in a shallow dish.
  • Whisk the eggs and milk together in a medium bowl.
  • Spread 1 tablespoon of mayonnaise on one side of each slice of bread.
  • Place 1 1/2 slices of cheese on top of 4 slices of bread, placing it directly on the mayonnaise.
  • Place the other 4 slices of bread, mayonnaise side down, on top of the cheese to form 4 sandwiches. Cut each one diagonally into quarters.
  • One at a time, dip each sandwich quarter in egg mixture and then coat in the cracker crumbs.
  • Place on parchment paper and refrigerate for 1 hour.
  • Pour 2 inches of oil into a Dutch oven.Heat oil to 375 degrees.
  • Working in batches, fry the sandwich quarters for 2 to 3 minutes, flipping over halfway through.
  • Transfer to a paper towel-lined plate.

1 large onion, thinly sliced
Kosher salt
1 1/2 cups low-sodium beef broth
1/4 teaspoon freshly grated nutmeg
1 tablespoon horseradish, plus more to taste
8 ounces gruyere cheese, thinly sliced
3/4 pound thinly sliced roast beef
4 hoagie rolls, split

Steps:

  • Melt 1 tablespoon butter in a large nonstick skillet over medium-high heat. Add the onion and 1/4 teaspoon salt; cook, stirring, until golden brown, about 10 minutes. Transfer to a bowl; reserve the skillet.
  • Meanwhile, make the dip: Bring the beef broth and nutmeg to a simmer in a small saucepan; remove from the heat and add the horseradish and 1/2 tablespoon butter. Cover and keep warm.
  • Layer half of the cheese, then the roast beef, onion and the remaining cheese on the rolls. Melt 1 tablespoon butter in the skillet over medium heat. Add 2 sandwiches and top with a heavy skillet. Cook, pressing down on the top skillet to flatten the sandwiches, until the bread is golden brown and the cheese melts, about 4 minutes per side. 1/4 cup mayonnaise
8 slices bread
8 slices process American cheese
1 egg
1/2 cup milk
1/4 teaspoon salt
1 cup crushed saltines (about 25 crackers)
