Time 40m

Yield 4 serving(s)

Number Of Ingredients 8

1/4 cup boiling water
1/2 teaspoon salt
4 cups shredded cabbage
2 eggs, beaten
1/4 cup white vinegar
1/2 cup mayonnaise
1 cup shredded cheddar cheese
1 cup coarsely crushed potato chips

Steps:

  • Preheat oven to 350°F.
  • Add salt and cabbage to the boiling water, stir and boil 2-3 minutes.
  • Remove from heat but do not drain.
  • In a bowl, combine eggs, vinegar and mayonnaise, mix in cabbage and cooking liquid.
  • Pour into a 1 quart casserole, top with cheese and potato chips and bake 25-30 minutes.

Tips:

  • Choose the right cabbage: Select a firm, green cabbage with tightly packed leaves. Avoid any heads that show signs of wilting or bruising.
  • Slice the cabbage thinly: This will help it cook evenly and absorb the flavors of the sauce.
  • Don't overcrowd the pan: Cook the cabbage in batches if necessary to avoid overcrowding the pan. This will help it cook evenly and prevent it from steaming instead of searing.
  • Use a good quality cheese: The type of cheese you use will greatly impact the flavor of the dish. Use a sharp cheddar cheese for a bolder flavor or a mild cheddar cheese for a more subtle flavor.
  • Don't overcook the cabbage: Overcooked cabbage will be mushy and bland. Cook it just until it is tender-crisp.

Conclusion:

Cheese scalloped cabbage is a classic comfort food that is easy to make and always a hit with a crowd. It is a versatile dish that can be served as a side dish, a main course, or even a breakfast casserole. With its creamy, cheesy sauce and tender-crisp cabbage, cheese scalloped cabbage is sure to become a family favorite.
