Tips:

  • Mise en place: To ensure smooth and efficient baking, measure and prepare all ingredients and equipment before starting the cheesecake-making process.
  • Use high-quality cream cheese: Opt for full-fat cream cheese for a rich and creamy texture. Allow the cream cheese to come to room temperature before mixing to ensure smooth incorporation.
  • Cream the butter and sugar thoroughly: This step helps incorporate air into the mixture, resulting in a light and fluffy cheesecake. Cream the butter and sugar until light and creamy, and make sure there are no granules of sugar visible.
  • Add the eggs one at a time: Gradually add the eggs one at a time, beating well after each addition. This prevents the eggs from curdling and ensures a smooth batter.
  • Bake in a water bath: Baking the cheesecake in a water bath creates a humid environment that helps prevent cracks and promotes even baking. Make sure the water level reaches halfway up the sides of the springform pan.
  • Chill thoroughly: Allow the cheesecake to cool completely at room temperature before refrigerating. This helps prevent the cheesecake from sinking in the center. Chill the cheesecake for at least 4 hours, or overnight for best results.
  • Caramel sauce: For the caramel sauce, use a heavy-bottomed saucepan to prevent burning. Stir the sugar and water constantly until the sugar dissolves and turns a deep amber color. Remove from heat immediately and stir in the cream and butter until smooth.
  • Apple topping: Peel and slice the apples thinly and evenly. Toss the apples with lemon juice and cinnamon sugar to prevent browning and enhance their flavor.
