4 medium baking potatoes
1 cup fat-free cottage cheese
1 can (5 ounces) albacore white tuna in water, drained and flaked
1 celery rib, chopped
1 medium onion, finely chopped
1/2 cup shredded cheddar cheese, divided
1/4 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon pepper

  • Scrub and pierce potatoes; place on a microwave-safe plate. Microwave, uncovered, on high for 15-20 minutes or until tender, turning once., When cool enough to handle, cut each potato in half lengthwise. 200g can tuna , whatever type you've got in the cupboard
½ a bunch of spring onions , finely chopped
4 tbsp mayonnaise
3thick slices of granary or wholemeal bread
50g cheddar , coarsely grated
generous pinch of paprika

Steps:

  • Preheat the grill on its highest setting. Drain the tuna, flake it into a bowl and mix with the spring onions and mayonnaise. Season with salt and plenty of freshly ground black pepper.
  • Toast the bread under the grill until it's nicely browned on both sides, then spread the tuna mixture on top, right up to the edges of the toast. Scatter over the cheese and put back under the grill until the cheese is bubbling.
  • Slice in half, sprinkle with paprika and tuck in.

1 (6 ounce) can chunk light tuna
1/4 cup mayonnaise
1/2 teaspoon lemon juice
1 tablespoon capers, coursely chopped
2 tablespoons green onions, finely chopped
4 tablespoons cream cheese spread
4 slices tomatoes
4 tablespoons gouda cheese (or another mild cheese) or 4 tablespoons monterey jack cheese (or another mild cheese)
4 large kaiser rolls

Steps:

  • Preheat oven to 375°F
  • In a bowl, combine drained tuna, mayonnaise, lemon juice, capers and green onion. Set aside.

1 1/2 cups mesclun or 1 1/2 cups other mixed greens, torn
2 (3/4 lb) tuna steaks
1 clove garlic, minced
1 teaspoon any strong mustard
1 teaspoon ground ginger
1/2 teaspoon sesame oil
1/2 teaspoon black pepper
1/4 cup dry white wine (or water)
1/4 cup soy sauce
1 1/2 tablespoons lime juice

Steps:

  • Preaheat your grill or broiler.
