juice of one lime

Steps:

½ cup shredded cheddar cheese
⅓ cup fresh chives, chopped
½ cup milk
2 eggs
1 teaspoon salt
1 tablespoon chili powder
½ cup oil, for frying

Steps:

  • In a large bowl add the ingredients.
  • Mix well.
  • In a large skillet, heat a half cup of oil (or until entire skillet is covered with a thin layer) over medium-high heat.
  • Spoon 2 tablespoons of mixture to form each fritter into the hot oil.

2 leeks, chopped
½ cup beer
¼ cup milk
1 tablespoon butter, melted
1 egg, beaten
½ cup whole wheat flour
½ cup all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
¼ teaspoon white sugar
ground black pepper, to taste
1 pinch dried basil, or to taste
1 pinch dried thyme, or to taste
1 (12 ounce) can whole kernel corn, drained
½ cup shredded Cheddar cheese
1 cup vegetable oil, or as needed

Steps:

  • Heat 1 tablespoon vegetable oil in a skillet over medium heat; cook and stir leeks until slightly browned, about 5 minutes.
