This cheesy kielbasa sausage and potato casserole is hearty and delicious, with tender chunks of potatoes and kielbasa in a creamy cheese sauce and then baked.

1 lb sausage kielbasa, (cut 1/4" thick then cut each piece into 4)
3 large potatoes, (peeled, diced into 1/2" cubes)
1 cup diced onions
2 cloves garlic, (minced)
1 tsp Slap ya mama® seasoning
1 tsp pepper
1 cup chicken broth
1 cup heavy cream
10.5 oz can cheddar cheese soup ((I used half a can))
1 cup sharp cheddar cheese
1/2 cup water, (may need more, use 1/8 cup at a time)

Steps:

  • Preheat oven to 350° and lightly spray a 13 x 9 baking dish or a 3 quart baking dish with non stick cooking spray. Set aside.
  • In a Dutch oven or larger stock pot, add cut sausages with about 1/2 cup of water (might need to add more water as sausage browns. Add 1/8 of a cup at a time).
  • Cook over medium heat until water is evaporated and sausage is browned a bit then add diced onions, cook for 3-4 minutes and add garlic. Cook until onions are translucent
  • After sausage has browned and onions are translucent, add diced potatoes to pot.
  • Pour chicken broth, heavy cream, 1/2 can of cheddar cheese soup, seasoning and pepper into pot. Stir.
  • Cook over low heat just until mixture starts to boil. Turn off heat and add cheese to pot.
  • Mix everything together and pour into prepared baking dish. Add additional cheddar cheese on top, if desired.
  • Cover with foil and bake for 65-75 minutes or until potatoes are tender.
  • Remove from oven and remove foil. Place back in the oven for 10 additional minutes.
  • Carefully remove from oven and enjoy!

12 ounces uncooked elbow macaroni
2 pounds kielbasa or Polish sausage, halved lengthwise and sliced
1 tablespoon olive oil
2 medium onions, chopped
2 medium zucchini, quartered and sliced
2 medium carrots, grated
1/2 teaspoon minced garlic
1 jar (26 ounces) spaghetti sauce
1 can (14-1/2 ounces) stewed tomatoes
1 large egg, lightly beaten
1 carton (15 ounces) ricotta cheese
2 cups shredded cheddar cheese
2 cups shredded part-skim mozzarella cheese
2 green onions, chopped

Steps:

  • Cook macaroni according to package directions. Meanwhile, in a large skillet, brown sausage in oil over medium heat; drain. Add the onions, zucchini, carrots and garlic; cook and stir until crisp-tender, 5-6 minutes. , Stir in spaghetti sauce and tomatoes. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes. Drain macaroni., In a small bowl, combine egg and ricotta cheese. In each of 2 greased 13x9-in. baking dishes, layer a fourth of each of the following: macaroni, meat sauce, ricotta mixture, cheddar and mozzarella. Repeat layers. Top with green onions. , Cool 1 casserole; cover and freeze it for up to 2 months. Cover and bake the remaining casserole at 350° for 15 minutes. 2 cups milk
1 tablespoon minced garlic
1 teaspoon salt

1 pound kielbasa sausage, sliced thin
4 large russet potatoes, peeled and cubed

  • Preheat oven to 375 degrees F (190 degrees C).

1 (14 1/2 ounce) can stewed tomatoes, undrained
1 egg, lightly beaten
1 (15 ounce) carton ricotta cheese
2 cups cheddar cheese, grated
2 cups mozzarella cheese, grated
2 green onions, chopped

Steps:

  • Cook macaroni according to package directions, drain and set aside.
  • Brown sausage in oil in a large skillet. Add onions, zucchini, carrots and garlic. Cook and stir 5 minutes or until crisp tender.

1 1/2-2 lbs of smoked kielbasa
1 bag small shell pasta or 1 bag elbow macaroni (any pasta shape can be used)
1 onion, diced (more or less to desired taste)
1 green peppers or 1 red pepper, diced (my family prefers green pepper)
1/2 package cubed Velveeta cheese (or 1 cup of your cheese of choice....we prefer Velveeta because it's creamier)
1/2 cup milk or 1/2 cup water
2 tablespoons butter or 2 tablespoons olive oil
salt and pepper

Steps:

  • Pre-heat oven to 350 degrees.
  • Cook the Pasta as directed on package.
  • Drain and pour into large Oven-Safe Casserole dish.
  • In a large skillet, saute the diced onion and pepper in 2 Tbsp of butter or Olive Oil.
  • Slice the smoked sausage links into small pieces and add to the skillet with the onion and pepper.
  • When the sausage is browned (most smoke sausages are precooked, so it shouldn't take more than a few minutes to brown).
  • add the contents of the skillet (sausage, pepper and onion) to the pasta in the Casserole Dish.
  • Mix well.
  • Add the cubed or shredded cheese.
  • Add the 1/2 cup milk or water to the mixture.
  • Salt and Pepper if desired.
  • Stir well.
