6 Old El Paso™ flour tortillas for burritos (from 11.5-oz package)
1 package (3.5 oz) sliced pepperoni
2 medium roma (plum) tomatoes, thinly sliced
1 cup shredded pizza cheese blend (4 oz)
3 tablespoons butter or margarine
1 can (8 oz) pizza sauce, warmed

Steps:

  • Top 3 tortillas equally with pepperoni, tomatoes and cheese. Top with remaining tortillas.
  • In 12-inch nonstick skillet, melt 1 tablespoon of the butter over medium heat; rotate skillet so butter coats bottom of skillet. Cook 1 quesadilla in butter 6 to 8 minutes, turning once, until lightly browned. Remove from skillet; place on cutting board.
  • Repeat with remaining butter and quesadillas. Cut each quesadilla into 16 square pieces. Serve with warmed pizza sauce.

1/2 c or more pizza mozzarella
1/4 of a sweet pepper, sliced thin
6 - 8 pieces of pizza pepperoni
1/4 c marinara dipping sauce
1/4 tsp garlic powder
1/4 tsp Italian seasoning

Steps:

  • Place a grill pan over med heat. Spray with non stick spray
  • On one tortilla, place half the cheese, the green pepper, the pepperoni, and the remaining cheese.
  • Transfer the tortilla to the grill pan. Cover the quesadilla with the other tortilla. Press down
  • Cook for 2 - 4 minutes or until the cheese is beginning to melt and there is color developing on the bottom tortilla.
  • Carefully turn the tortilla over to cook the other side. Leave it again 2 - 4 minutes or until the cheese is completely melted and there are grill marks on the other tortilla.
  • Remove from heat, transfer to a plate, and slice into sticks. Let sit for 1 - 2 minutes.
  • In a small bowl, combine the marinara sauce with the garlic powder and Italian seasoning.
  • Dip the sticks into the marinara sauce and enjoy!

2 teaspoons butter, softened
4 flour tortillas (10 inches)
1 cup shredded part-skim mozzarella cheese
8 thin slices hard salami

I threw this together for lunch because I was tired of making sandwiches. It was really easy to make and my kids loved it. You can substitute different toppings or cheeses with whatever you have around the house.

4 burrito-size flour tortillas
4 ounces cheddar cheese
4 ounces monterey jack cheese
1 cup spaghetti sauce (more or less to taste) or 1 cup pizza sauce (more or less to taste)
8 ounces mozzarella cheese
4 -6 ounces ham (or other toppings)

Steps:

  • Preheat oven to 350 degrees.
  • Lay 2 tortillas side by side on a greased cookie sheet.
  • Mix shredded cheddar and monterey jack and cover tortillas. Then place the other two tortillas on top.

1/2 cup shredded fontina cheese
1/2 cup shredded provolone cheese (or about half of a one-ounce slice)
1/4 cup shredded Parmesan cheese
1/4 cup pizza sauce plus additional sauce for dipping
Optional pepperoni
1/4 cup sliced pepperoni per quesadilla
