GLAZE:
1/2 cup packed brown sugar
1 tablespoon cornstarch

1 cup cherry or cranberry juice
SAUCE:
6 tablespoons brown sugar
1/4 cup cornstarch
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
2 cups unsweetened apple juice
2 tablespoons cider vinegar
2 cans (14-1/2 ounces each) pitted tart cherries, drained
12 to 16 drops red food coloring, optional

Steps:

  • Place ham on a rack in large roasting pan. Bake, uncovered, at 325° for 3 hours., In a small saucepan, combine the brown sugar, cornstarch and mustard. Stir in cherry juice until smooth. 11-12 pound bone-in ham with natural juices
2 1/2 cups grape juice (divided)
2 1/2 cups cola (divided)
20- ounce can of sliced pineapple (you'll need both the juice and the pineapple)
2 cups brown sugar

Steps:

  • Let the ham stand at room temperature for 90 minutes.
  • Preheat oven to 275 degrees F. Set the rack at the lowest position. Rinse and pat dry the ham. Using a sharp knife, score the skin of the ham in a criss-cross pattern. Place ham in a roasting pan. Pour just 1 1/2 cups of the cola and 1 1/2 cups of grape juice into the pan and add additional water if necessary to bring the liquid level to 1/2 inch. Cover the pan tightly with tin foil.
  • Roast in oven for 2 3/4 to 3 hours (about 15 minutes per pound) or until the internal temperature of the ham reaches 100 degrees F.
  • While the ham is cooking, prepare the glaze. Combine the remaining 1 cup grape juice, 1 cup cola, the juice from the pineapple (reserve the pineapple slices for later) and the brown sugar in a small sauce pot and simmer on low for 20 minutes, until it becomes thick and glossy.
  • Let stand at room temperature until ready to use (as the glaze cools, it will thicken up, making it easier to brush on the ham).
  • Take the ham out of the oven when it reaches the first internal temperature of 100 degrees F. Turn the oven to 425
  • degrees F. Brush the ham with about 1/4 of the glaze all over. Use toothpicks to stud the ham with the sliced pineapple, if desired. Once the oven comes to temperature, return the ham, uncovered to oven.
  • Bake for 15 minutes until the liquid is bubbly and the ham has turned to a nice, deep golden brown. The internal temperature of the ham should be 140 degrees F.
  • Remove ham to a cutting board and let rest for 15 minutes.
  • Return the remaining glaze to the stove on medium-low heat to warm the glaze up for serving. Carve and slice the ham, drizzle a bit of the cola glaze on each plate.

  • Let the ham sit at room temperature for about 30 minutes.
  • Preheat the oven to 325 degrees F.
  • Trim off any skin from the ham. Use a sharp paring knife to score through the fat in a diagonal crosshatch pattern without cutting through to the meat. 2 onions, quartered
3 qt pineapple juice
2 teaspoons dijon mustard
½ cup pineapple juice
½ cup maple syrup
25 cloves

Steps:

  • Place the gammon joint in a large pot and add the onions and pineapple juice. Bring to a boil over high heat.
  • Once boiling, reduce the heat to medium, cover, and simmer for 70 minutes. (Gammon joints need to cook for 40 minutes per kilo (2 ¼ lbs), so if you are using a smaller or large gammon joint, adjust the cooking time accordingly.)
  • Once cooked, carefully remove the gammon joint from the pan and place on a baking sheet to cool slightly.
  • Preheat the oven to 375°F (190°C).
  • Make the glaze: in a small pan over a medium heat, combine the Dijon mustard, pineapple juice, and maple syrup and bring to a boil. Cook for 10 minutes, or until slightly reduced and glossy.
  • Carefully remove the skin from the gammon joint, using a small paring knife to help ease the fat away from the skin. Be sure to leave a small layer of fat on top of the gammon.

1-20 ounce can sliced pineapples (I use Dole in the blue can)
1-10 ounce or small jar Maraschino cherries
1 cup light brown sugar-packed
1 teaspoon ground cinnamon
A pinch or 1/8 teaspoon ground cloves
1/4 stick of butter or margarine-melted
1/2 cup pineapple juice (juice from the can of rings)
toothpicks

Steps:

  • Melt butter in a saucepan. Add brown sugar, cinnamon, ground cloves and pineapple juice and let simmer not even 5 minutes, just until the mixture begins to thicken. Remove from heat.
  • Stick a toothpick in the cherry and lay pineapple ring around as many as you want to make beautiful, just drizzle glaze all over the top to soak in the pineapple. Cover with foil and place in pre-heated oven.

10 lbs spiral cut ham (fully cooked)
1 (8 ounce) jar cherry preserves
1 (20 ounce) can crushed pineapple in juice
2 tablespoons spicy brown mustard

3 c ham drippings
1/2 c water

  • 1. pre heat oven to 325*
  • 2.
