2 cups cubed cooked chicken
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 cup sour cream
3/4 cup mayonnaise
2 celery ribs, chopped
3 hard-boiled large eggs, chopped
1 can (4 ounces) mushroom stems and pieces, drained
1 can (8 ounces) water chestnuts, drained and chopped
1 tablespoon finely chopped onion
2 teaspoons lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup shredded cheddar cheese
1/2 cup crushed cornflakes
2 tablespoons butter, melted
1/4 cup sliced almonds

Steps:

  • In a large bowl, combine the first 12 ingredients. Transfer to a greased 13x9-in. baking dish; sprinkle with cheese. , Toss cornflakes with butter; sprinkle over cheese. Top with almonds. Bake, uncovered, at 350° for 25-30 minutes or until heated through.

2 cups uncooked long-grain rice
½ tablespoon butter
4 tablespoons chopped onion
2 cups diced celery
3 cups cooked, chopped chicken breast meat
1 cup mayonnaise
1 (10.75 ounce) can condensed cream of chicken soup
½ cup blanched slivered almonds
1 cup crushed cornflake crumbs
2 tablespoons butter

Steps:

  • In a saucepan bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes. Set aside. Melt 1/2 tablespoon butter in a medium skillet over medium heat; saute onion and celery until soft.

1 (10.5 ounce) can chicken broth
4 cups cooked diced chicken
2 cups water chestnuts, drained
2 teaspoons lemon juice
1 ½ cups mayonnaise
2 cups chopped celery
1 small onion, chopped
2 teaspoons salt
2 cups cooked rice
½ cup butter
1 ½ cups crushed buttery round crackers
1 cup sliced almonds
1 cup shredded Colby cheese

2 cups long grain rice
2 (10 1/2 ounce) cans cream of chicken soup
1 (10 1/2 ounce) can cream of mushroom soup
4 -5 boneless skinless chicken breasts
3 -4 tablespoons butter
1/2 cup milk
parmesan cheese
sliced almonds
parsley

Steps:

  • Melt butter and add soups and milk. Reserve 1 C soup mixture. Add rice to remaining soup mixture. Pour into 9x13 baking dish. Cut chicken breasts into thirds and place on top of rice and soup. Pour remaining cup of soup over all. Sprinkle with parmesan cheese, parsley and almonds on top. Bake covered at 350 degrees for about 1 1/2 hours. Check after one hour and stir rice.
  • **Sometimes I like to make this with lower fat content. When I do I decrease the amount of rice by 1/2 C, eliminate 1 can of cream of chicken soup and add in the place 1 1/2 C chicken broth and leave out the butter and almonds. It is still very creamy and very tasty. I also use lowfat cream soups.

1 1/2 cups cooked chicken, cut into small pieces (You can even use canned or precooked chicken, like Tyson. to save time. Does not alter taste very mu)
1/2 cup mayonnaise
1 can undiluted cream of chicken soup
1 cup celery (chopped sm)
1/2 cup sliced almonds
1/3 cup cracker crumb (ritz or club)
1/2 teaspoon grated onion
2 hard-boiled eggs, , chopped finely
potato chips (I use corn flakes) or corn flakes (I use corn flakes)

Steps:

  • Preheat oven to 350 deg.
  • Mix all ingredients together well except for the corn flakes.
  • Lightly grease a casserole dish and add mixture.
  • Top with corn flakes.
  • May drizzle a little melted butter over corn flakes if desired.
