PASTA, CHICKEN AND BROCCOLI PESTO TOSS

Categories     Salad     Pasta

Number Of Ingredients 11

2 cups uncooked spiral pasta
2 cups cubed cooked chicken
2 cups small broccoli florets, cooked crisp-tender, cooled
1 1/2 cup shredded mozzarella cheese
2/3 cup lightly packed fresh basil leaves
2 cloves garlic
1 cup mayonnaise (maybe slightly too much?)
1 tbsp lemon juice
1/2 tsp salt
1/2 cup shredded parmesan cheese
1/2 cup pine nuts or coarsely chopped walnuts

Steps:

  • Cook pasta, drain and cool. Combine pasta, chicken, broccoli and mozzarella cheese in large bowl. Process basil and garlic in covered blender or food processor until finely chopped. Add mayo, lemon juice and salt. Stir in parmesan, add to pasta mixture, toss to coat. Stir in pine nuts. Serve immediately or cover and refrigerate. For maximum flavor, remove from refrigerator and toss gently 30 min before serving.

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make a big difference in the final dish. Look for tender chicken breasts, crisp broccoli florets, and a flavorful pesto sauce.
  • Cook the chicken and broccoli properly: Chicken should be cooked through but not overcooked, and broccoli should be tender-crisp. Overcooked chicken will be dry and tough, and overcooked broccoli will be mushy.
  • Don't skimp on the pesto: Pesto is the star of this dish, so use a generous amount. You can use store-bought pesto or make your own. If you're making your own, use fresh herbs for the best flavor.
  • Add some additional vegetables: If you want to add more vegetables to this dish, consider adding diced carrots, zucchini, or bell peppers. You can also add a handful of baby spinach or arugula.
  • Serve immediately: Chicken and broccoli pesto pasta is best served immediately after it's made. The pasta will start to absorb the sauce and become soggy if you wait too long.

Conclusion:

Chicken and broccoli pesto pasta is a quick and easy meal that's perfect for a busy weeknight. It's also a great way to use up leftover chicken. This dish is packed with flavor and nutrition, and it's sure to be a hit with the whole family.
