Steps:
- Cook the chorizo in a wide, deep frying pan over a medium-high heat, stirring occasionally, for 3-4 minutes. Remove with a slotted spoon and drain on kitchen paper.
- Add the peppers, onion, celery, garlic and chili to the pan and cook, stirring occasionally, for 5 minutes, until softened slightly. Stir in the thyme and rice, cook for 1 minute, then add the tomatoes, broth and Tabasco and bring to the boil. Cover, reduce the heat to low and simmer very gently, stirring occasionally, for 12 minutes, until most of the liquid has evaporated. Season to taste.
- Stir in the chorizo, shrimp and scallions and cook for 1 minute. Serve or cool completely to freeze.
Tips:
- Use high-quality ingredients for the best flavor. Organic, free-range chicken and chorizo, fresh vegetables, and a flavorful broth will make a big difference in the final dish.
- Don't overcrowd the pan when cooking the chicken and chorizo. If you do, the meat will steam instead of browning, and the jambalaya will be less flavorful.
- Brown the chicken and chorizo in batches if necessary. This will help to prevent overcrowding and ensure that the meat is cooked evenly.
- Add the vegetables to the pot in stages, starting with the harder vegetables like celery and carrots. This will give them time to soften without overcooking.
- Use a flavorful broth for the jambalaya. Chicken broth, vegetable broth, or even seafood broth can be used. If you're using a store-bought broth, be sure to choose one that is low in sodium.
- Season the jambalaya to taste. A good starting point is to add 1 teaspoon of salt, 1/2 teaspoon of black pepper, and 1/4 teaspoon of cayenne pepper. You can adjust the seasonings to your liking.
- Serve the jambalaya with your favorite toppings. Some popular options include green onions, cilantro, hot sauce, and sour cream.
Conclusion:
Chicken and chorizo jambalaya is a delicious and easy-to-make dish that is perfect for a weeknight meal. It's also a great way to use up leftover chicken or chorizo. With its bold flavors and hearty ingredients, this jambalaya is sure to be a hit with your family and friends.
