4 slices bacon, chopped
0.5 cup finely chopped onion
1 tablespoon minced garlic
0.5 teaspoon black pepper
0.25 teaspoon salt
0.25 cup apple brandy, apple juice, or dry white wine
0.667 cup cored and finely chopped Granny Smith apple (1 medium)
2 tablespoon snipped fresh Italian parsley
1 teaspoon snipped fresh sage
2 pound uncooked ground chicken
1 cup soft bread crumbs
6 pretzel buns or hamburger buns, split and toasted
6 grilled apple slices (optional)
Toppers such as whole-grain mustard, applewood smoked bacon, grilled red onion slices, lettuce, and/or cheese slices (optional)

Steps:

  • For apple mixture: In a large skillet cook chopped bacon until crisp. Drain bacon on paper towels, reserving 1 tsp. drippings in skillet. Add onion, garlic, pepper, and salt to skillet. Cook about 3 minutes or until onion is tender, stirring occasionally. Carefully add apple brandy. Simmer, uncovered, until nearly all the brandy evaporates. Remove from heat. Stir in bacon, chopped apple, parsley, and sage; let cool.
  • In a large bowl combine ground chicken, bread crumbs, and apple mixture. Divide mixture into 6 portions. Shape each into a patty.
  • Grill chicken patties, covered, over medium heat 14 to 18 minutes or until done (165°F),* turning once halfway through. Serve burgers on buns with grilled apple slices and/or desired toppers. Makes 6 burgers.

350g skinless chicken thighs
2 small apples, grated and the juice squeezed out
1/2 white onion, chopped
1 garlic clove, crushed or grated
1 medium egg
3 sage leaves
salt and pepper
2 tbsp plain flour
1 tbsp oil
burger buns, lettuce and tomato to serve
2 large baking potatoes
1/2 tbsp oil
salt and pepper

Steps:

  • Put the chicken thighs into a food processor and blitz until the meat has broken down.
  • Add the grated apple, onion, garlic, egg and sage leaves. Season with salt and pepper and blitz again until all the ingredients are well combined.
  • Spread the flour out onto a plate and then using your hand mould the chicken mixture into four burgers, coating on both sides with the flour.
  • Chill the burgers in the fridge for 30 minutes to firm up.
  • In the meantime wash the potatoes and cut them into wedges. Toss in the oil, season with salt and pepper and then bake in the oven at 200c for approximately 20 minutes.
  • Heat the oil in a frying pan and cook the burgers for about 6 minutes on either side until cooked through.
  • Serve immediately with burger buns, lettuce and tomato.
