CHICKEN BREASTS WITH TOMATOES AND CAPERS
This recipe was originally developed by Pierre Franey in 1991 for the 60-Minute Gourmet column, a weekly feature dedicated to Times-worthy dishes that were easy, quick and inexpensive. This recipe fit the bill perfectly, and it still does. Just sauté the chicken breasts until they are lightly browned. Then add shallots and garlic, tarragon, tomatoes, vinegar, capers, white wine and tomato paste. Stir well and cook for about 9 minutes more. That's it.

TENDER TOMATO CHICKEN BREASTS
This is a light, juicy, flavorful dish. Being a mom of a 7 month old, I've learned to take a lot of shortcuts and still be able to cook quality food. This is quick, easy, and tasty. If you absolutely must use fresh veggies, that's ok, but frozen veggies, in my opinion, work a little bit better. Serve with rice, if desired. To kick it up a bit, add chopped green peppers in with the tomatoes.

CHICKEN IN TOMATO-CAPER SAUCE
This is what I call an easy crowd-pleaser. I like to serve this entree with pasta and a nice salad. If you don't have capers, try using diced green olives instead. -Shemaine Rohrbach, Allentown, Pennsylvania

Steps:
- Lay the chicken between two pieces of waxed paper and flatten each cutlet with the flat end of a mallet until thin.
- Heat the olive oil in a large, non-stick skillet until hot. While the oil is heating, season the chicken with salt and pepper and dredge it in flour.
- Sauté the chicken over high heat, about 3 minutes on each side. Remove to a warm platter and keep warm.
- Quickly add the chicken broth to the pan and stir with a wooden spoon to release any caramelized bits that may be stuck to the pan.
- Add the tomatoes and cook until the broth has reduced by half. Add the lemon juice and capers.
- Pour the sauce over the chicken, sprinkle with parsley and serve.
Tips:
- Choose the right chicken breasts: Look for boneless, skinless chicken breasts that are about the same size so they cook evenly. If you're using frozen chicken breasts, be sure to thaw them completely before cooking.
- Use a nonstick skillet: This will help prevent the chicken from sticking and will make it easier to clean up afterward.
- Don't overcrowd the skillet: If you're cooking multiple chicken breasts, be sure to give them enough space in the skillet so they can cook evenly.
- Cook the chicken over medium heat: This will help prevent the chicken from drying out.
- Use a meat thermometer to check the internal temperature of the chicken: The chicken is done cooking when it reaches an internal temperature of 165 degrees Fahrenheit.
- Let the chicken rest before serving: This will help the juices redistribute throughout the chicken, making it more tender and flavorful.
Conclusion:
Chicken breasts with tomatoes and capers is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of juicy chicken, tangy tomatoes, and briny capers is sure to please everyone at the table. This dish can be served with a variety of sides, such as rice, pasta, or roasted vegetables.
