Number Of Ingredients 6

2 boneless chicken breasts, poached and cut into four pieces.
1 can crescent roll
1 can cream of mushroom soup
1/4 cup milk
1 cup shredded cheddar cheese, divided

I love recipes that can easily be adapted, and this one is perfect because there are so many different things you could do with it. Try it and I promise you will love it! Crispy and flavorful on the outside, moist and juicy on the inside...and a real kid-pleaser. Why not add some red potatoes in the same dish alongside the chicken (poke holes in them or half if large) and bake for an easy side? Lovely served with a green salad for a complete meal with minimal effort. Recipe easily tripled for OAMC. Enjoy! From the book: Don't Panic: Dinner's in the Freezer

Provided by Camille Beckstrand

Categories     Main Course

Time 1h5m

Number Of Ingredients 10

18 Rhodes Dinner Rolls (thawed but still cold)
2 Tablespoons butter
½ cup onion (diced)
8 ounces fresh mushrooms (sliced)
½ pound sausage
½ teaspoon sage
¼ teaspoon marjoram
⅙ teaspoon all spice
1 egg (separated)
1 pound boneless, skinless chicken breasts (cooked and diced)

Steps:

  • In a large skillet combine butter, onion, mushrooms and sausage. Cook until sausage is lightly browned. Place mixture in a large bowl and add sage, marjoram, allspice, egg yolk, and chicken. Lightly toss together.
  • Combine 2-3 rolls together (depending on how big of bundles you want- we just used 2 rolls per bundle) and flatten into a circle. Repeat with remaining rolls. Divide chicken mixture equally between the circles. Moisten edges of dough with water and fold over mixture to completely enclose. Place folded side down on a sprayed baking sheet. Brush with beaten egg white. Place 3 whole sage leaves on top, if desired, and brush again. Cover with plastic wrap and let rise 15 minutes (I actually skipped this step and they turned out fine). Remove wrap and bake at 350 degrees for 30-35 minutes or until golden brown.
  • We dipped our bundles in marinara sauce and it was delicious!

CHICKEN BUNDLES LAYERED CASSEROLE

Chicken Bundles Layered Casserole image

The original recipe calls for the filling to be placed by spoonfuls into the crescent rolls, but I found it a pain in the butt to fold them, so I have made this recipe into a layered casserole! If you would like to try making bundles, just put a heaping tablespoon of the chicken and cheese into the center of each flattened triangle, and then fold the triangle as if you are folding a cloth diaper (fold in the two long points and then the short point over the filling), and pinch together the edges to seal.

Categories     One Dish Meal

Time 1h

Yield 6 serving(s)

Number Of Ingredients 5

1 (8 ounce) package crescent rolls
2 cups chicken, cooked and cubed
1 -2 cup of shredded cheese (I prefer Sharp Cheddar)
1 cup chicken broth
1 (10 3/4 ounce) can cream of chicken soup (low sodium/low fat is great!)

Steps:

  • Preheat oven to 350°.
  • Separate the crescent rolls into 8 triangles; flatten and stretch each one out.
  • Line an 8x8-inch pan with 4 of the triangles (keeping 2 triangles as a rectangle will help them to fit perfectly- you will end up with 2 rectangles in the bottom of the pan).
  • Sprinkle the chicken and most of the shredded cheese over the crescent"rectangles".
  • Reserve some cheese for topping off the entire dish.
  • Create 2 more rectangles from the remaining 4 crescent triangles and place them on top of the chicken and cheese.
  • Mix together the chicken broth and the Cream of Chicken soup; pour over crescent rectangles.
  • Sprinkle any left-over cheese on top.
  • Bake at 350° for one hour, until the crescents are golden brown.
  • Cut into about 6 servings, or whatever number fits your family!
  • Enjoy!

Tips:

  • To ensure even cooking, use chicken breasts of uniform thickness. If necessary, slice the thicker breasts in half horizontally.
  • For a flavorful filling, use a variety of fresh herbs and spices.
  • To prevent the bundles from drying out, wrap them tightly in prosciutto or bacon.
  • Cook the bundles over medium heat to prevent them from burning.
  • Serve the bundles immediately with your favorite sides, such as roasted vegetables or mashed potatoes.

Conclusion:

Chicken bundles are a quick and easy way to prepare a delicious and elegant meal. By following these tips, you can create a variety of flavorful and satisfying dishes that are sure to impress your friends and family.
