6 skinless, boneless chicken breast halves
1 pound sliced bacon
1 (10.75 ounce) can condensed cream of mushroom soup
1 (16 ounce) container sour cream
½ teaspoon paprika

Steps:

  • Preheat oven to 275 degrees F (135 degrees C).
  • Line the bottom of a 9x13 inch baking dish with slices of chipped beef. Wrap bacon slices around chicken breasts, and place on top of chipped beef. In a medium bowl, mix together condensed soup and sour cream. Pour sour cream mixture over chicken breasts, and sprinkle with paprika.

6 boneless skinless chicken breast halves (5 ounces each)
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup canned crabmeat, drained, flaked and cartilage removed
1/4 cup sliced water chestnuts, drained and chopped
2 tablespoons dry bread crumbs
2 tablespoons reduced-fat mayonnaise
1 tablespoon minced fresh parsley
1 teaspoon Dijon mustard
6 teaspoons marinade for chicken,divided
2 green onions, thinly sliced, divided
3 slices reduced-fat Swiss cheese, divided

Steps:

  • Flatten chicken to 1/4-in. thickness; sprinkle with salt and pepper. In a small bowl, combine the crab, water chestnuts, bread crumbs, mayonnaise, parsley, mustard, 2 teaspoons marinade for chicken and half of the onions. , Chop one cheese slice; stir into crab mixture. Spread over chicken; roll up and secure with toothpicks. , In a large nonstick skillet coated with cooking spray, brown chicken on all sides. The stars were aligned!!! I had some of my favorite ingredients on-hand and put together this simple yet elegant chicken dish during our last snow storm. Pounding the chicken ensures a tender chicken breast. Browning the chicken before baking gives a beautiful brown color and really holds the bundle together. Finishing in the oven, the chicken cooks evenly throughout and plumps the chicken leaving it very juicy.

2 chicken breasts, skinless pounded thin
4 ounces goat cheese, herb flavored, divided
3 ounces sun-dried tomatoes, julienned
3 ounces artichoke hearts, quartered
olive oil
1/2 teaspoon butter
kosher salt & freshly ground black pepper

Steps:

  • Pre-heat the oven to 375 degrees F.
  • Butterfly and pound the chicken breasts between 2 sheets of plastic wrap to 1/4 inch.
  • Salt and pepper both sides of the chicken.
  • Place goat cheese, sun-dried tomatoes or artichokes in the center of each breast.
  • Roll the chicken together like an envelope and secure using a few toothpicks.
  • Heat 1 teaspoon oil and butter in a nonstick skillet over medium heat.
  • Place the chicken in the pan, top side down and brown on all 4 sides (about 2 minutes each side), the chicken firms and holds together quickly making this easy to do.
  • Transfer the chicken to a baking dish and bake for 15 minutes.
  • When the chicken is cooked through, remove the toothpicks and let rest for 5 minutes before slicing.

8 ounces sour cream
1 (10 ounce) can Campbell's Cream of Mushroom Soup
1/2 cup butter
8 ounces hillshire farm seasoned stuffing mix
1 1/2 cups chicken broth

Steps:

  • Preheat oven to 350.
  • Boil chicken 20-40 minutes until almost fully cooked. Pull apart into bite size pieces.
  • Mix chicken with sour cream and cream of mushroom soup.
  • Spread mixture into a buttered pan.
  • Melt butter.
  • Pour stuffing mix into a mixing bowl, stir in butter and chicken broth. Spread over chicken mixture.
  • Bake 30 minutes or until bubbly.

4 boneless skinless chicken breasts
1/2 cup all-purpose flour
1/4 teaspoon salt
1/8 teaspoon cracked black pepper
1 tablespoon olive oil
1 cup imitation crabmeat, flaked
1/2 lb asparagus tips, lightly steamed
1/2 cup water
1/4 cup powdered milk (actually 1/4 c COW SOUP MIX, see below)
2 egg yolks (freeze whites for another use)
2 tablespoons lemon juice, freshly squeezed
1/4 teaspoon dry mustard
1/4 teaspoon salt
1 dash white pepper
3 tablespoons salted butter, melted
1 dash paprika (sprinkled per chicken breast and overtop of hollandaise)
1 dash dry parsley flakes (ditto)

Steps:

  • Place chicken breasts, one at a time, into a plastic bag; pound to 1/4-inch thick, and then cut each in half. Dredge in a mix of flour, salt and pepper.
  • Heat oil in a large skillet, browning each side for 3-5 minutes. Remove from heat and sprinkle with flaked crabmeat, garnish with asparagus tips.
  • Prepare the hollandaise, blending the ingredients (except butter) together. While blending, slowly drizzle in melted butter. Ladle over top of crabmeat and chicken.
  • Sprinkle with paprika and parsley and heat through, in a 350°F oven about 10 minutes.

2 garlic cloves, smashed
4 ounces frozen spinach, chopped, thawed and squeezed dry
1/4 teaspoon nutmeg (or a bit more)
1 teaspoon honey
2 tablespoons soy sauce
1/2 teaspoon chili flakes (or less)
1/4 teaspoon cornstarch
2 boneless skinless chicken breast halves
32 g Laughing Cow light swiss cheese (2 wedges)
pepper
4 tablespoons panko breadcrumbs or 4 tablespoons fresh breadcrumbs

Steps:

  • Preheat oven to 375°F.
  • After defrosting and squeezing the spinach add the garlic & nutmeg, mix well, set aside.
  • In a small sauce pan mix together the Soy, honey, chili flakes and cornstarch heat to boiling. Set aside to cool.
  • Cut a pocket in each of the chicken breasts and place a wedge of cheese in it, add 2 oz of the spinach mixture, Sprinkle with pepper. Close the breast and place the breast on a lightly oiled oven proof pan.
  • Paint the top of the breasts with the soy/honey glaze, do not bother to paint under the breasts.
  • Sprinkle with the Panko crumbs.

  • Combine bread crumbs, paprika, pepper and flour on a paper plate.
  • Dip chicken in egg, making sure all sides are coated, and then dredge in crumb mixture. Repeat process with second chicken breast, being sure to use all the egg and crumbs. Set aside.
  • In 10 inch skillet, combine oil and butter; heat over medium heat until bubbly and hot. Add chicken and cook, turning once, until both sides are lightly browned and chicken is almost cooked through, 2 to 3 minutes on each side; transfer to plate and keep warm.

¼ cup milk

1 cup finely chopped pistachio nuts
2 tablespoons minced shallots
½ cup dry white wine
½ cup chicken stock
½ cup heavy cream
¼ cup butter
1 ½ tablespoons pomegranate syrup
4 skinless, boneless chicken breast halves

Steps:

  • Beat together the eggs and the milk. Dredge the chicken breasts in the flour, and then in the egg wash. Dredge in the pistachios.
  • Lightly fry chicken in 2 tablespoons butter or margarine over medium heat until slightly browned. Place in a lightly greased 9x13 inch baking dish.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes.

  • Mix flour, salt and pepper. Coat chicken with flour mixture.
  • Heat oil in 12-inch skillet or Dutch oven over medium heat until hot.

16 ounces seasoned stuffing mix (any flavor I used chicken)
6 boneless skinless chicken breasts
2 tablespoons chicken bouillon granules
12 ounces chicken gravy (turkey flavor will work)

Steps:

  • Preheat oven to 350 degrees.
  • In large bowl mix potatoes and stuffing mix (if seasoning pack and bread is packaged separate, mix both together).
  • Pound chicken breast to about 1/4 inch thick.
  • At this point you can cut your chicken to make 12 smaller rolls or leave whole and make 6 larger ones.
  • Season chicken with bouillon, (use like you would salt).
  • Spoon about 1/2 cup mixture onto edge of each chicken breast and roll, securing with tooth picks.
  • Season outside with bouillon.
  • Bake on nonstick baking sheet for 30 to 40 minutes, depending on size.
  • Heat gravy and serve over chicken.

1 1/2 lbs boneless skinless chicken breasts (approx. 4-6 breasts)
4 ounces noodles, cooked
1 teaspoon salt
2 tablespoons butter
4 tablespoons parmesan cheese, grated
2 (10 3/4 ounce) cans chicken broth
1/2 lb mushroom, sliced
2 tablespoons butter
1 tablespoon romano cheese, grated
salt and pepper, to taste
2 teaspoons garlic, minced (4 cloves)
1/4 cup butter
1/3 cup flour
2 cups cream or 2 cups half-and-half
1 cup chicken broth
1/2 cup white wine
salt, to taste

Steps:

  • Simmer chicken in chicken broth until tender. When chicken is done, remove from broth and cut into bite size pieces. Save one cup of the broth and discard the rest. Sauce:. Melt 1/4 cup butter in small sauce pan then add 1/3 flour and cook for 2 minutes Slowly add 2 cups cream,1 cup broth, salt and 1/2 cup wine. Cook gently stirring often, about 5 minutes. Meanwhile, once the noodles are cooked, drain them and season with 1 teaspoons salt, butter, parmesan cheese and 1 cup of the sauce. Put this mixture into a greased, shallow baking dish. Saute mushrooms and garlic in 2 tablespoons butter for 3 to 4 mins., then season with salt and pepper to taste. Put mushrooms over noodles and then add chicken breast. Cover with the remaining sauce and sprinkle parmesan cheese and romano cheese over the top and bake at 350 degrees for 30 minutes.

three slices bacon, cooked and crumbled, drippings reserved
1/2 cup chopped onion
1/2 cup thinly sliced celery
one can sliced mushrooms, 4 ounces, drained
one can cream of celery soup, 11 ounces
1 cup sour cream
2 teaspoons worcestershire sauce
1/2 teaspoon salt
1/8 teaspoon ground black pepper
3 to 4 cup sliced cooked chicken
biscuits
paprika
fresh thyme for garnish

Steps:

  • 1. preheat oven to 350°. Lightly grease a 12 x 8" baking dish. In a large skillet over medium-high heat, sauté onion, celery and mushrooms in reserved bacon drippings until tender. In a large bowl, mix soup, sour cream, Worcestershire sauce, salt, and pepper. Add chicken, bacon, and sautéed vegetables to bowl. Mix well. Pour into prepared baking dish. Bake for 25 minutes.
  • 2. Remove casserole from oven. Arrange biscuits over casserole. Sprinkle tops of biscuits lightly with paprika. Return to oven and bake 20 to 25 minutes longer. Garnish with fresh thyme if desired.
