4 large boneless chicken breasts
1 large yellow onion
2 can(s) mild green chilies, diced, 4.5 oz each
1 green or red bell pepper
fajita seasoning
1 large can mild green enchilada sauce, 28 oz.
16 soft flour tortillas, taco sized
2 c shredded cheddar cheese
sour cream

Steps:

  • 1. Peel and chop onion.
  • 2. Remove core and seeds from bell pepper and chop it.
  • 3. Put onion and pepper in the bottom of Crock Pot.
  • 4. Add green chilies.
  • 5. Arrange chicken breasts on top of vegetables.
  • 6. Sprinkle fajita seasoning over the chicken.
  • 7. Top with one can of mild green enchilada sauce.
  • 8. Place lid over Crock Pot. Turn on high and let cook for approximately 6 hours.
  • 9. Remove chicken breasts from Crock Pot and shred them.
  • 10. Add chicken back to vegetables and mix all together.

Edited to add: I just made these again last night using 1 lb of pork stir fry strips instead of chicken and it turned out great! Very flavorful. I stirred in an extra TBS of taco seasoning an hour before it was done based on the other reviews but I'm not sure it needed it. I would suggest maybe only adding the extra taco seasoning if your chicken breasts are large or you're using more than a pound of pork. These are really easy to make and taste Great rolled up in warm flour tortillas with all the usual fajita toppings.

1 (1 1/4 ounce) packet fajita seasoning mix
2 tablespoons flour
2 green peppers, cut into 1 inch strips
