CHICKEN IN CHILE SAUCE (AJI DE GALLINA)

Chicken in Chile Sauce (Aji De Gallina) image

Gourmet May 2009, Comfort food, Peruvian style. The chile sauce's brilliant yellow hue comes from a pinch of turmeric, as well as bottled ají amarillo paste, which also lends a fruity heat. It is thickened with bread and walnuts (a tasty trick for stretching foods to feed many mouths) and blended to a satiny smoothness. Although Peruvian cooks usually shred the chicken and add it directly to the sauce, we like the elegance of serving the roast chicken breasts on top of the sauce and passing extra around in a gravy boat. http://www.gourmet.com/recipes/2000s/2009/05/chicken-in-chile-sauce

CHICKEN WITH SWEET CHILI SAUCE

Chicken With Sweet Chili Sauce image

Yes, what else...another recipe using Mae Ploy's sweet chili sauce. This is a stovetop recipe, but am certain grilling would be wonderful. Should you want a superior sauce even to Mae Ploy's, see recipe #457035.

Provided by gailanng

Categories     Chicken Breast

Time 50m

Yield 3 serving(s)

Number Of Ingredients 5

1/2 cup sweet chili sauce (Mae Ploy)
1/2 cup soy sauce
1 garlic, minced
peanut oil or vegetable oil
3 chicken breasts, boneless, skinless (4-5 ounces each)

Steps:

  • In a small bowl mix together sweet chili sauce, soy sauce and garlic. Pour 1/2 cup (half the mixture) into a small plastic food storage zip bag. Add chicken and turn to coat; refrigerate and marinade 30 minutes.
  • To a skillet, add a tablespoon or two of oil and heat over medium-high heat. Remove chicken from marinade and brown on one side for about 2-3 minutes (it may smoke a little from the sweet marinade). Turn the chicken over and brown for 2 minutes longer. Cover with a lid, turn the heat to low and let it finish cooking for about 8 minutes.
  • Place remaining chili sauce and soy sauce mixture in a small saucepan and simmer over low heat until heated through, about 5 minutes. Serve over chicken.

Tips:

  • To make the chicken more flavorful, marinate it in the chile sauce for at least 30 minutes before cooking.
  • If you don't have time to marinate the chicken, you can simply cook it in the chile sauce for a shorter amount of time.
  • Be sure to use a heavy-bottomed pot or Dutch oven when cooking the chicken, as this will help to prevent the sauce from burning.
  • If the sauce becomes too thick, you can add a little bit of water or chicken broth to thin it out.
  • Serve the chicken with rice, potatoes, or your favorite side dish.

Conclusion:

Chicken in Chile Sauce is a delicious and easy-to-make dish that is perfect for any occasion. The rich and flavorful sauce is sure to please everyone at your table. So next time you're looking for a quick and easy weeknight meal, give this recipe a try. You won't be disappointed!
