¼ cup all-purpose flour
½ teaspoon salt
¼ teaspoon black pepper
4 tablespoons butter (divided)
1/3 cup diced shallots
½ cup white wine or low-sodium chicken broth
1 cup low sodium chicken broth
2 tablespoons Dijon mustard
1/2 cup heavy cream
Salt and pepper
1 tablespoon chopped parsley

Steps:

  • Halve each chicken breast lengthwise to create 4 even-sized pieces.
  • Whisk together the flour, salt, and pepper in a shallow bowl. Dredge both sides of the chicken in the flour mixture. Set aside.

4 skinless, boneless chicken breast halves, pounded to an even thickness
3 tablespoons vegetable oil
1 tablespoon butter
2 cups thinly sliced mushrooms

1 cup half-and-half
1 ½ tablespoons Dijon mustard
