4 boneless skinless chicken breast halves
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons butter, divided
2 tablespoons olive oil, divided
1/2 cup chicken broth
2 tablespoons minced chives

Steps:

  • Place the chicken breasts between two sheets of waxed paper; flatten evenly with a mallet. Sprinkle both sides with salt and pepper. In a large skillet, heat 1 tablespoon each of butter and oil; brown chicken over medium-high heat for about 6 minutes on each side or until juices run clear. 4 chicken breasts ((pounded 1/2-inch thin))
2 teaspoons each of onion powder and garlic powder
1 teaspoon fresh chopped parsley
1/2 teaspoon each of dried thyme and dried rosemary*
salt and pepper (, to season)
4 cloves garlic (, minced (or 1 tablespoon minced garlic))
1 teaspoon fresh chopped parsley
1/2 teaspoon each of dried thyme and dried rosemary
1 cup milk ((or half and half)*)
Salt and freshly ground black pepper (, to taste)
1 teaspoon cornstarch mixed with 1 tablespoon water (, until smooth)

Steps:

2 cups buttermilk
3 egg yolks, beaten
1/2 teaspoon poultry seasoning

1/4 cup onion, finely chopped
1/4 cup dry white wine

Steps:

  • Whisk in broth mixture, and simmer 5 minutes
  • Strain sauce.
  • Add cream and cilantro.
  • Season with salt and pepper.
  • Keep warm until serving.

3/4 cup herb seasoned stuffing mix
2 1/2 ounces canned mushrooms, drained
1 tablespoon fresh parsley, snipped
2 -3 tablespoons chicken broth
1 tablespoon butter, melted
2 tablespoons canola oil
3/4 cup chicken broth
3/4 cup half-and-half cream
4 teaspoons flour
2 tablespoons fresh chives, snipped
