Time 30m

Yield 8 serving(s)

Number Of Ingredients 7

1 cup salsa
10 ounces tostitos light tortilla chips
5 ounces evaporated milk
4 ounces chopped green chilies
10 1/2 ounces reduced-fat cream of chicken soup
10 ounces Velveeta reduced fat cheese product
12 1/2 ounces cooked chicken breasts

Steps:

  • Combine salsa, milk, chilies, soup, cheese and chicken in saucepan.
  • Heat until cheese is melted. Fill a 9x13 casserole with tortilla chips.
  • Pour sauce over chips and bake in 350 degree oven until bubbly, about 20 minutes.

Tips:

  • Use a variety of vegetables. This will add flavor, color, and nutrients to your casserole. Some good options include bell peppers, corn, onions, celery, carrots, and peas.
  • Use a flavorful cheese. A good melting cheese, such as cheddar, Monterey Jack, or Swiss, will help to bind the casserole together and give it a creamy texture.
  • Don't overcook the chicken. Overcooked chicken will be dry and tough. Cook it just until it is cooked through, about 10 minutes per side.
  • Season the casserole well. Use a combination of salt, pepper, garlic powder, and onion powder to taste. You can also add other herbs and spices, such as paprika, cumin, or chili powder.
  • Top the casserole with a crispy topping. This could be a breadcrumb topping, a crushed tortilla chip topping, or a parmesan cheese topping. A crispy topping will add texture and flavor to the casserole.

Conclusion:

Chicken ole casserole is a delicious and easy-to-make dish. It is perfect for a weeknight meal or a potluck. With a few simple tips, you can make a chicken ole casserole that is sure to please everyone at the table.
