Categories     Main Course

Time 40m

Number Of Ingredients 13

½ pound fettuccine pasta
Olive oil for pan
2 large chicken breasts, cut into cubes (skinless, boneless)
1 teaspoon Italian herbs seasoning
Salt and pepper
1 (14 ounce) jar artichoke hearts in water, quartered
3 cloves minced garlic, divided
1 (14 ounce) can crushed tomatoes
½ cup heavy cream (plus more to taste)
Granulated sugar, a few pinches
2 tablespoons fresh basil, chopped (plus more for garnish)
1 cup fresh spinach leaves, packed
Parmesan cheese for garnish

Steps:

  • Cook pasta according to package directions. Drain and set aside.
  • Season the chicken with the Italian seasoning, 1 teaspoon salt, and ¼ teaspoon ground black pepper.
  • In a large skillet, heat about 2 tablespoons of olive oil over medium-high heat. Add the chicken and cook until golden brown on the outside and fully cooked inside. Add minced garlic (from 1 clove) along with artichoke hearts, and cook for another 2-3 minutes, stirring. Transfer to a plate and set aside.
  • Wipe skillet clean. On the same skillet, heat 1 tablespoon olive oil over medium heat. Add the remaining minced garlic and cook about 2-3 minutes until fragrant. Add the crushed tomatoes and bring to a simmer. Then add the basil and the heavy cream. Stir to combine and bring back to a simmer for 1 minute. If it tastes a bit too acidic (tomatoes can taste acidic), add a few pinches of granulated sugar - it works like a charm! Adjust seasoning with salt and pepper if needed.
  • To the sauce in the pan, add the chicken and artichokes back, along with the cooked fettuccine, and the fresh spinach. Toss everything until combined. Garnish with parmesan cheese and basil. Enjoy!

CHICKEN AND ARTICHOKE HEART FETTUCCINI ALFREDO

Chicken and Artichoke Heart Fettuccini Alfredo image

"Long name I know! I just made this for supper tonight with homemade alfredo sauce and it was sooooo good." This is the coment of the p oster of this recipe.

Provided by Nana Lee

Categories     One Dish Meal

Time 35m

Yield 6-8 serving(s)

Number Of Ingredients 9

1 lb fettuccine pasta, cooked
1 (26 ounce) jar alfredo sauce (or make your own-I used a recipe that I got off of this site)
1 (4 ounce) jar marinated artichoke hearts, chopped roughly
3 boneless skinless chicken breasts (adjust according to your family size)
asiago cheese or parmesan cheese
1 cup half-and-half cream
1/2 cup butter
1/2 cup asiago cheese
1/2 cup parmesan cheese

Steps:

  • Cut away any excess fat from chicken, cube, and completely cook.
  • Prepare noodles according to package directions.
  • Drain artichoke hearts (no need to completely drain or rinse as the marinade adds a little to the alfredo sauce).
  • Prepare alfredo sauce or heat up jar.***
  • Add the cubed chicken and artichokes.
  • Pour sauce over noodles and cover with cheese.
  • Serve with garlic bread and a salad.
  • *** Directions for alfredo sauce used:.
  • Melt butter in a sauce pan and add half-n-half.
  • Bring to a simmer, keep heat on low and stir in the cheeses.
  • Simmer until smooth.

Tips:

  • Use high-quality ingredients for the best flavor. Fresh artichoke hearts, juicy chicken breasts, and flavorful sun-dried tomatoes will make a world of difference.
  • Don't overcook the chicken. Chicken breasts can dry out quickly, so cook them just until they are cooked through. A meat thermometer is a helpful tool to ensure that the chicken is cooked to the proper temperature.
  • Use a good quality olive oil. Olive oil adds a delicious flavor to the dish and helps to keep the chicken and vegetables moist.
  • Add a splash of white wine or chicken broth to the pan when cooking the chicken. This will help to deglaze the pan and create a flavorful sauce.
  • Add the artichoke hearts, sun-dried tomatoes, and spinach towards the end of cooking. This will help to prevent them from becoming overcooked and mushy.
  • Serve the pasta immediately, garnished with fresh parsley or basil.

Conclusion:

This chicken pasta with artichoke hearts is a delicious and easy-to-make meal that is perfect for a weeknight dinner. The combination of tender chicken, flavorful artichoke hearts, and tangy sun-dried tomatoes creates a dish that is sure to please everyone at the table. So next time you're looking for a quick and easy pasta recipe, give this one a try. You won't be disappointed!
