TGIFRIDAY'S PECAN-CRUSTED CHICKEN SALAD

TGIFriday's Pecan-Crusted Chicken Salad image

Don't let the lengthy directions fool you; this salad is not difficult to prepare. Pecan-crusted chicken, served sliced and chilled on salad greens, tossed with Balsamic Vinaigrette dressing, topped with mandarin oranges, sweet-glazed pecans, celery, dried cranberries, and Bleu cheese. Time does not include chill time. I borrowed a friend's cookbook entitled Top Secret Restaurant Recipes 2 and wanted to put this recipe here so that I wouldn't lose it.

Provided by Crafty Lady 13

Categories     Chicken

Time 40m

Yield 4 serving(s)

Number Of Ingredients 21

4 skinless chicken breast halves
1/2 cup pecans, finely chopped
1/2 cup corn flake crumbs
3/4 teaspoon salt
1 cup milk
2 eggs, beaten
1 cup all-purpose flour
1/2 cup canola oil
1 cup canola oil
1/3 cup balsamic vinegar
4 teaspoons Grey Poupon Dijon Mustard
4 teaspoons granulated sugar
1/2 teaspoon salt
2 teaspoons minced garlic
1 cup dried cranberries
3 tablespoons dark brown sugar
1/2 cup finely chopped pecans
12 cups romaine lettuce, chopped (2 heads)
1 cup celery, sliced (2 ribs)
2 (11 ounce) cans mandarin oranges, drained
1/2 cup blue cheese, crumbled

Steps:

  • Make the pecan-crusted chicken first since it is served cold.
  • Pound each chicken fillet to about 1/2-inch thick. You can do this easily by covering each chicken breast in plastic wrap, and pounding with a kitchen mallet.
  • Combine 1/2 cup finely chopped pecans, corn flake crumbs, and 3/4 teaspoon salt in a shallow bowl.
  • Combine milk with beaten eggs in another shallow bowl.
  • Dump the flour into another shallow bowl.
  • Bread each chicken breast by coating each with flour.
  • Dip the flour-dusted chicken into the egg mixture.
  • Coat the chicken with a thick coating of the pecans and corn flake crumbs.
  • Preheat 1/2 cup canola oil in a large skillet over medium/low heat.
  • When the oil is hot, saute the chicken fillets for 3-4 minutes per side or until golden brown.
  • Cool chicken on a rack or paper-towels.
  • When you can handle the chicken, cover it and refrigerate it for at least two hours.
  • As the chicken chills, you can make the balsamic vinaigrette by combining 1 cup canola oil, balsamic vinegar, mustard, granulated sugar and 1/2 tsp salt in a blender.
  • Blend on low speed for just a few seconds, or until the dressing begins to thicken. Don't blend too long or your vinaigrette will get too thick, like mayonnaise.
  • Pour vinaigrette into a small bowl and mix in minced garlic.
  • Chill this until you're ready to use it.
  • When you're ready to build your salad, toss lettuce and celery with about 3/4 cup of the balsamic vinaigrette.
  • Arrange the lettuce on four plates, then sprinkle the cranberries over the lettuce (about 1/4 cup per serving).
  • Combine the 3 tablespoons of brown sugar with 1/2 cup finely chopped pecans.
  • Sprinkle 2 tablespoons of the mixture on each salad.
  • Sprinkle about 1/2 can of drained mandarin orange segments over each salad, followed by about 2 tablespoons of crumbled bleu cheese.
  • Slice each chicken fillet into thin strips. Arrange one sliced chicken fillet on top of each salad and serve.

THIS MAKES A PICNIC SIZED SALAD OR LARGE GROUP (25-30 PEOPLE)
1 can(s) 50 oz of cooked chicken breast, canned or cook 3 lbs of chicken breasts and shred
4 large gala apples cored
3 Tbsp real lemon juice
2 c of black or red seedless grapes
3 stalk(s) of celery diced ( 3 long celery sticks)
1 bunch spring onions, chopped fine
2 bag(s) of 2 oz of chopped pecans (optional)
SAUCE
3 c miracle whip
3 Tbsp dill weed
2 Tbsp milk
1/4 c sugar
1 1/2 Tbsp real lemon juice
salt and pepper to taste
IF YOU ARE ONLY WANTING TO MAKE THIS FOR A SMALL GROUP OF FAMILY, SIMPLY CUT RECIPE IN HALF

Steps:

  • 1. I buy canned chicken from Sams club,(chiefs choice chicken breast) if you would rather cook your own chicken you can, just boil 3 lbs of chicken breast and shred.
  • 2. Wash and dry your grapes, I chop my grapes in fourths, so the pieces aren't too big
  • 3. Wash and dry your Apples, I core and then dice my apples into large bite size hunks
  • 4. Wash and dry your spring onions, you may use regular yellow or white onions if you have them, I prefer Spring onions, gives it a little more of a fresher taste in my opinion.
  • 5. Wash and dry your celery, cut off both ends of the stalk, and dice up celery into small pieces ****ONCE YOU HAVE DICED UP ALL YOUR INGREDIENTS,PLACE LEMON JUICE OVER THEM IN A LARGE BOWL,TO KEEP THE APPLES AND GRAPES FROM TURNING BAD******
  • 6. In a separate bowl, mix together the Miracle Whip and milk, lemon juice salt and pepper, dill weed and sugar, set aside.
  • 7. Take you large bowl and toss evenly add shredded chicken, toss again, once salad is tossed well, add sauce, stir and add more salt and pepper to taste if it isn't enough for you. Add Pecans (again Optional) Stir ONCE more, and then place in fridge, better if sits over night, otherwise ready in about 2-3 hours.
  • 8. I serve mine with Miracle Whip and Spicy Brown Mustard on Wheat-berry Bread, I have found Wheat-berry makes the best sandwiches. BUT to each their own!!! Serve with chips, or My Potato Salad also here on JAP!!!! Hope your next POT LUCK of Large family dinner finds this as BIG of hit as it has gone over at my functions and wedding~~~! Or even your small get together's~~~!!!! Enjoy ~Liz
  • 9. P.S. Only good in Fridge for up to 4 days! Just so you know, once you see water at the bottom of your salad, it's time to throw it away!

Tips:

  • Choose the right chicken. Boneless, skinless chicken breasts are the best choice for this salad, as they are easy to cook and shred. You can also use rotisserie chicken for a quick and easy option.
  • Cook the chicken properly. To ensure that the chicken is cooked through, cook it to an internal temperature of 165 degrees Fahrenheit.
  • Shred the chicken. Once the chicken is cooked, shred it into small pieces using two forks or a meat shredder.
  • Use fresh, high-quality ingredients. The fresher the ingredients, the better the salad will taste. Choose ripe, crisp vegetables and fresh herbs.
  • Don't overdress the salad. A little bit of dressing goes a long way. Too much dressing will overwhelm the other flavors in the salad.

Conclusion:

Chicken pecan salad is a delicious and refreshing salad that is perfect for a light lunch or dinner. It is also a great way to use up leftover chicken. With its combination of sweet, savory, and crunchy flavors, this salad is sure to be a hit with everyone who tries it. So next time you're looking for a quick and easy salad recipe, give chicken pecan salad a try.
