1 cup chopped pistachios
½ cup bread crumbs
2 tablespoons Dijon mustard
2 tablespoons olive oil
2 tablespoons honey
salt and pepper to taste
2 large skinless, boneless chicken breast halves, cut into 1-inch strips

Steps:

  • Preheat oven to 500 degrees F (260 degrees C). Lightly coat a baking sheet with cooking spray.
  • Mix together pistachios and bread crumbs in a shallow bowl. In a separate bowl, stir together Dijon mustard, olive oil, honey, salt and pepper until smooth. Dip chicken into Dijon mixture to coat, then coat with bread crumbs. Place onto prepared baking sheet.

It has all my favorite foods in it and can be served with a green salad and choice wine to make you and your guests want it again and again!

1 (8 -10 ounce) chicken breasts
1 tablespoon butter
1 tablespoon olive oil
1 whole egg
1/4 cup flour
1/4 cup Italian breadcrumbs
1 ounce brandy
1 garlic clove
1 tablespoon shallot
1 cup heavy cream
1/2 cup mushroom, sliced
1/4 cup fresh spinach
3 -4 ounces gorgonzola, crumbled
3 -4 ounces fontina or 3 -4 ounces mozzarella cheese, shredded
salt and pepper

Steps:

  • Dust chicken breast(s) in flour, then dip in egg, followed by a coating of breadcrumbs.
  • Pan fry lightly on medium/high heat with olive oil and butter for 2-3 minutes per side until golden brown.
  • Stir in garlic, shallots, brandy, spinach, mushrooms, heavy cream, salt and pepper; simmer to reduce for 5 minutes.
  • Add gorgonzola, then turn off heat.
  • Place chicken breast(s) in heat-resistant dish and pour sauce over the chicken.

2 skinless and boneless chicken breasts, butterflied and then cut in half
Sea salt and freshly ground black pepper
All-purpose flour, for dredging
6 tablespoons unsalted butter
5 tablespoons extra-virgin olive oil
1/3 cup fresh lemon juice
1/2 cup chicken stock
1/4 cup brined capers, rinsed
1/3 cup fresh parsley, chopped

Steps:

  • Season chicken with salt and pepper. Dredge chicken in flour and shake off excess.
  • In a large skillet over medium high heat, melt 2 tablespoons of butter with 3 tablespoons olive oil. When butter and oil start to sizzle, add 2 pieces of chicken and cook for 3 minutes. When chicken is browned, flip and cook other side for 3 minutes. Remove and transfer to plate. Melt 2 more tablespoons butter and add another 2 tablespoons olive oil. When butter and oil start to sizzle, add the other 2 pieces of chicken and brown both sides in same manner. Remove pan from heat and add chicken to the plate.
  • Into the pan add the lemon juice, stock and capers. Return to stove and bring to boil, scraping up brown bits from the pan for extra flavor. Check for seasoning. Return all the chicken to the pan and simmer for 5 minutes. Remove chicken to platter. Add remaining 2 tablespoons butter to sauce and whisk vigorously. Pour sauce over chicken and garnish with parsley.
