¼ cup wok oil
⅛ cup red wine vinegar
1 tablespoon onion flakes
1 tablespoon minced garlic
1 lemon, zested
1 teaspoon Greek seasoning

1 teaspoon ground black pepper
½ teaspoon dried thyme
3 skinless, boneless chicken breasts, or as needed, cut into 1-inch pieces
8 bamboo skewers, or as needed, soaked in water for 30 minutes

Steps:

  • Whisk lemon juice, oil, vinegar, onion flakes, garlic, lemon zest, Greek seasoning, poultry seasoning, oregano, pepper, and thyme together in a bowl and pour into a resealable plastic bag.

¾ teaspoon salt
1 pinch ground white pepper
1 tablespoon sunflower seed oil
24 wooden skewers
1 cup water
5 tablespoons peanut butter
2 tablespoons kecap manis (sweet soy sauce)
1 tablespoon brown sugar
2 cloves garlic, minced
½ teaspoon salt
1 tablespoon lime juice

Steps:

1 cup brown sugar
1 cup water
3/4 cup soy sauce
1/2 cup molasses
1/2 teaspoon ginger (minced)
1/4 teaspoon coriander (ground)
1/4 teaspoon black pepper
1 teaspoon garlic (minced)

1/8 teaspoon white pepper (ground)
2 tablespoons ketjap manis
2 teaspoons lime juice
12 chicken breasts (boneless tenderloins)

Steps:

1 1/4 pounds (566 grams) boneless skinless chicken breast, cut into 1-inch chunks
1 medium red onion (240 grams), cut into 1-inch chunks and separated
1 medium zucchini (300 grams), cut into 1/2-inch rounds or half-moons, depending on width
1 small red bell pepper (150 grams), cut into 1-inch squares
2 teaspoons kosher salt
2 cups (450 grams) whole-milk plain Greek yogurt
1/4 cup (53 grams) freshly squeezed lemon juice
1/4 cup (7 grams) chopped fresh Italian parsley
1/4 cup (7 grams) chopped fresh mint
1 tablespoon (21 grams) honey
1 teaspoon ground cumin
1/4 teaspoon ground cayenne
2 garlic cloves, finely chopped
1/4 cup (52 grams) extra-virgin olive oil, plus more for brushing

Steps:

  • If using wooden skewers, soak them in water for 30 minutes.

8 chicken thigh fillets, excess fat trimmed (boneless and skinless)
3 garlic cloves, crushed
1 inch fresh ginger, peeled, finely grated
1 large fresh red chili, finely chopped
1/4 cup ketjap manis (indonesian sweet sauce ABC brand)
1 teaspoon sugar
1 tablespoon fish sauce
2 tablespoons fresh lime juice
2 cups jasmine rice
salt
2 cups chicken stock
1/2 teaspoon ground turmeric
olive oil, to grease
ketjap manis, extra, to serve
lime wedge, to serve

Steps:

  • Soak 12 bamboo skewers in cold water for 15 minutes prior to grilling.
  • Use a sharp knife to cut the chicken into cubes. Combine the garlic, ginger, chili, ketjap manis, sugar, fish sauce and lime juice and pour into a sealable ziplock bag. Add the cubed chicken and squish to coat. Refrigerate for 1 hour to develop the flavors.
