2 tablespoons olive oil, divided
2 shallots, chopped
1 clove garlic, minced
1 teaspoon chopped fresh thyme
¼ teaspoon salt
¼ teaspoon ground black pepper
¾ cup soft goat cheese
3 dates, chopped
1 tablespoon chopped fresh basil
4 skinless, boneless chicken breast halves
4 large, thin slices of prosciutto

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spread 1 tablespoon of olive oil on a baking sheet, and set aside.
  • Heat 1 tablespoon of olive oil in a skillet over medium heat. Stir in the shallots, and cook until they turn translucent, about 3 minutes. Stir in the garlic, thyme, salt, and pepper; cook and stir an additional 2 minutes. Transfer the shallot mixture to a bowl. Mix in the goat cheese, dates, and basil; stir until well combined.
  • With a sharp knife, cut a 1-inch long slit into the thick side of each chicken breast. Work your fingers into the slit, and expand the slit to form a pocket in the breast meat. With your fingers or a spoon, stuff each chicken breast with about 1/4 cup of the goat cheese mixture. Wipe off any cheese mixture from the outside of the chicken breast, and wrap each breast in a slice of prosciutto so that the pocket opening is covered. Place the chicken breasts, seam sides down, onto the prepared baking sheet.
  • Bake in the preheated oven until the chicken meat is no longer pink and the prosciutto is browned and crisp, about 40 minutes. Turn the chicken breasts over after 20 minutes.

4 boneless chicken breast halves, skinned
1/2 cup fresh goat cheese (such as Montrachet) (about 4 ounces)
2 green onions, thinly sliced
3 basil leaves, shredded or 1 teaspoon dried, crumbled
Salt and freshly ground pepper
1 egg, beaten to blend
1/2 cup dry breadcrumbs
2 tablespoons (1/4 stick) unsalted butter melted
Mushroom-Wine Sauce
1/4 cup (1/2 stick) unsalted butter
1/2 pound mushrooms, sliced
1/4 cup dry white wine
2/3 cup chicken stock or canned low-salt broth
4 tablespoons chilled unsalted butter (1/2 stick), cut into 4 pieces
Salt and pepper

Steps:

  • For chicken:
  • Preheat oven to 350°F. Pound chicken between sheets of waxed paper to thickness of 1/4 inch using meat mallet. Pat chicken dry. Combine cheese, green onions and basil in small bowl. Season with salt and pepper. Spread cheese mixture lengthwise over half of each chicken piece. Tuck short ends in. Roll chicken up, starting at one long side, into tight cylinders. Tie ends with string to secure. Dip chicken in egg, allowing excess to drip into bowl. Roll in breadcrumbs, shaking off excess. (Can be prepared 4 hours ahead. Refrigerate.)
  • Place chicken in 8-inch square baking dish. Pour 2 tablespoons melted butter over. Bake until cooked through, about 20 minutes.
  • For sauce:
  • Meanwhile, melt 1/4 cup butter in heavy large skillet over medium heat. Add mushrooms and sauté until tender, about 8 minutes. Add wine and boil 3 minutes. Add stock and boil until liquid is reduced by half, about 6 minutes. Remove from heat and swirl in 4 tablespoons cold butter 1 piece at a time. Season sauce with salt and freshly ground pepper. Remove string from chicken. Cut rolls crosswise into 1/2-inch-thick rounds. Fan on plates. Serve immediately, passing sauce separately.

100g firm goat's cheese , such as Crottin de Chavignol
1 tsp fresh thyme leaves, plus 2-3 sprigs
4 rashers streaky bacon , thinly sliced
2 courgettes , thinly sliced
1-2 tbsp olive oil , plus extra for drizzling
250g vine tomato , thinly sliced

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Split the chicken breasts almost in half from one long side and open them out like a book. Bat them out a little with a rolling pin to flatten them. Season on all sides. Put half the goat's cheese on each piece of chicken and sprinkle with the thyme leaves. zest ½ lemon
½ long red chilli (deseeded if you don't like it too hot), finely chopped
1 tbsp finely chopped tarragon
4 skinless chicken breasts
8 slices prosciutto

  • Heat oven to 190C/170C fan/gas 5. Beat together the goat's cheese, lemon zest, chilli, tarragon and some seasoning. 4 oz chevre
4 oz proscuitto, sliced thinly and chopped
4 cloves garlic, chopped
1 tbsp. capers
1 tbsp. Dijon mustard
8 basil leaves
3/4 cup chicken stock
1/2 cup white wine
2 tablespoon olive oil
2 Tbsp chopped parsley
Salt and pepper (to taste)

Steps:

  • In a large ovenproof skillet, sauté the proscuitto until it is brown and crispy. Remove from pan, set aside. Pound the chicken breasts until approximately 1/2 inch thick. Season the chicken with salt and pepper on each side. In the center of each breast half, place 1 oz of the chevre, a quarter portion of the proscuitto, and two basil leaves. Roll the pieces up and secure with toothpicks so filling stays inside. Wrap in plastic wrap and refrigerate for 30 minutes to firm up. Once chicken is firm, add two tablespoons olive oil to the skillet used above. Brown chicken on all sides over medium high heat, set aside. Add onions to the pan and sauté until golden. Add garlic and sauté for about two more minutes, being careful not to burn the garlic. Add wine, scraping pan to deglaze, and then add the stock, Dijon mustard and capers. Let the mixture reduce by half. Add chicken back to the pan and put pan in the oven at 350 degrees for 20 minutes, or until chicken is cooked through. Garnish with parsley.
