2 (10.75 ounce) cans Campbell's® Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
1 cup light sour cream
1 (10 ounce) can diced tomatoes and green chiles, undrained
1 (15 ounce) can black beans, rinsed and drained
1 (1 ounce) envelope reduced-sodium taco seasoning mix
5 cups coarsely crushed tortilla chips
2 cups shredded Cheddar cheese
Chopped tomato
Sliced green onion
Chopped fresh cilantro leaves

Steps:

  • Heat the oven to 350 degrees F. Lightly grease a 13x9x2-inch baking dish. Stir the chicken, soup, sour cream, tomatoes and green chiles, beans and seasoning mix in a large bowl.
  • Layer half the chicken mixture, 3 cups tortilla chips and half the cheese in the baking dish. Layer with the remaining chicken mixture and tortilla chips. Cover the baking dish.

2 whole wheat tortillas
canola oil cooking spray (3 sprays)
1 lb lean ground turkey or 1 lb ground chicken
1 (14 ounce) can tomato sauce
2 teaspoons Tabasco sauce
1 cup low-fat cheddar cheese or 1 cup Mexican blend cheese
1 (16 ounce) can fat-free refried beans
baked corn tortilla chips, crushed
low-fat sour cream (optional)
salsa (optional)
lettuce (optional)
diced onion (optional)
diced green pepper (optional)

Steps:

  • Lightly spray pan with oil and brown ground turkey. Mix Tabasco with the tomato sauce and pour over the browned turkey. Simmer until slightly thickened.

12 ounces chicken breasts, strips for stir-frying
2 garlic cloves, minced
1 teaspoon chili powder
2 teaspoons canola oil
1 medium onion, halved and thinly sliced
3/4 cup chopped red bell peppers (1 medium) or 3/4 cup green bell pepper (1 medium)
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1 1/2 cups salsa
24 inches corn tortillas, coarsely torn
3 ounces reduced-fat monterey jack cheese, shredded (3/4 cup)
1/2 cup cherry tomatoes, quartered (optional)
1/2 avocado, halved, seeded, peeled, and chopped (optional)
corn chips, baked tortilla chips (optional) or broken taco shell (optional)

Steps:

4 c chicken, cooked and cut into bite-size pieces
2 can(s) cream of mushroom soup
1 can(s) cream of chicken with mushroom soup
1 can(s) cream of celery soup
1 can(s) green chiles, diced
5 stalk(s) celery, chopped fine
1 large onion, chopped fine
2 c pepper jack cheese, shredded
2 c cheddar cheese, shredded
1 pkg corn tortillas

Steps:

  • 1. Preheat oven to 350 degrees. Mix first seven ingredients in large bowl. Set aside.
  • 2. Spray 15 x 10 x 2" baking dish with non-stick spray. Line bottom of dish with tortillas, breaking tortillas to fit corners. Spread half the chicken mixture over the tortillas and top with half the cheese. Layer with another layer of tortillas and top with remaining chicken mixture. Top with cheese.

4 large chicken breasts with ribs attached
2 can(s) cream of chicken soup
2 can(s) (4 oz. ea) chopped green chiles*
1 tsp chili powder
1/4 tsp ground sage
1 tsp garlic powder
2 onions, finely chopped**
1 1/4 lb colby-jack cheese, grated, divided
1 dozen corn tortillas, cut or torn in bite-sized pieces
salt and pepper for chicken breasts

Steps:

  • 1. Lightly salt and pepper chicken breasts and place in 9x13x2" baking pan. Cover with foil and bake at 350 degrees for 1-1/2 hours. Cool, reserving chicken juices.
  • 2. In a large bowl, cut or tear chicken into bite-sized pieces. Add remainng ingredients, reserving 1 cup of the grated cheese to put on top. Mix well. Use juices from chicken to moisten ingredients, if needed.
  • 3. Pour into a greased, 9x13x2" baking dish and bake at 350 degrees for 40 minutes or until bubbly. Remove from oven and sprinkle top with reserved cheese. Return to oven and cook until cheese is melted.
  • 4. *If you like a lot of heat, add canned chopped jalapenos and additional spices to taste. **I don't like biting into onion chunks, so I use 1-1/2 T. dry, minced onion.
