1 tbsp coconut oil
1/2 large sweet onion (chopped)
2 small bell peppers (chopped)
4-5 cups broccoli (chopped)
1 1/2 medium zucchini (chopped)
2 cups red cabbage (chopped)
1/4 cup Oceans Halo No Soy, Soy-Free Sauce
1/4 tsp sea salt
1/4 tsp black pepper
fresh parsley (chopped)
sesame seeds
protein of choice - tofu, chicken, steak (OPTIONAL)

Steps:

  • Cook chickpea rice according to package directions.
  • While rice cooks, heat coconut oil in large skillet over medium heat, add onions and cook 2-3 minutes or until fragrant and they begin to become translucent.

1 Tablespoon tamari
1 cup onion (diced )
1 red bell pepper (diced (about 1 to 1 1/2 cups))
1 cup mushrooms (sliced)
1 green onion (sliced (for garnish, optional))
1 teaspoon fresh ginger (minced)
1 teaspoon fresh garlic (minced)
1 Tablespoon coconut sugar
1 Tablespoon cornstarch
3 Tablespoons tamari
3 Tablespoons rice vinegar
6 Tablespoons water
1/4 teaspoon crushed red pepper flakes ((or to taste))

Steps:

  • Marinate the chickpeas in the tablespoon of tamari for 15 minutes. Set aside.

1 tbsp creamy peanut butter
4 tbsp low sodium tamari or soy sauce
