1/4 cup chickpea flour
1/3 cup water
1 tablespoon nutritional yeast ((optional))
1/4 teaspoon salt ((black salt for a more egg like flavor))
1/4 cup vegetables of choice
1 tablespoon oil ((for frying))

Steps:

  • Put chickpea flour, nutritional yeast, and salt in a mixing bowl and give it all a stir.
  • Add half of the water and stir well until it forms a smooth paste. Add the remaining water and stir again until smooth and set aside while you prepare the add-ins.
  • Dice up whatever veggies you want to add to your omelette. (about ¼ cup of veggies per omelette).
  • Add oil to a well-seasoned iron skillet or a non-stick frying pan and saute the veggies on medium-low for about 3-5 minutes until they become tender.
  • Remove the veggies and add them to the batter and give the batter another stir.
  • Turn up the heat to medium and pour the batter in the skillet like you would a large pancake and cook for about 5 minutes until the top of the omelette no longer looks wet. (You can put a lid on the frying pan for a minute or two to help it cook evenly.)
  • Carefully loosen up the omelette with a spatula and flip the omelette to the other side and cook for 3-5 more minutes until it is no longer soft in the middle. (Make sure there is no wet batter left in the center).

1 tablespoon unsalted butter
3 tablespoons warm Sauteed Mushrooms, recipe follows
2 tablespoons diced triple or double creme cheese, such as St. Andre, Brillat-Savarin or Fromager d'Affinois
Pinch of chopped fresh thyme or other herb, optional
1 tablespoon olive oil
1 pound mushrooms (any assortment), sliced
1/2 teaspoon minced garlic
Kosher salt and freshly ground pepper to taste

Steps:

  • Crack the eggs into a small bowl, and use a fork to beat them with the salt and pepper.
  • Heat an 8-inch omelet pan or shallow skillet (preferably nonstick) over medium-high heat. Add the butter, let it melt and swirl the pan so it coats the bottom evenly. Pour the eggs into the pan and quickly shake and swirl so the eggs completely cover the bottom. Let the eggs firm up on the bottom, about 30 seconds, then use a rubber spatula to lift the edges of the omelet up so any uncooked egg on the top runs underneath.

¾ cup water
¼ cup olive oil, divided
1 tablespoon dried oregano
1 teaspoon ground black pepper
½ teaspoon cayenne pepper

¼ cup thinly sliced red bell pepper
½ zucchini, sliced into rounds

1 tablespoon cooking oil
1 tablespoon dried onion, Minced
1 (8 ounce) can tomato sauce
8 eggs, large
4 tablespoons margarine
1 (6 1/2 ounce) can mushroom pieces (drained mushrooms)
1 (16 ounce) can garbanzo beans (drained)
8 ounces cheddar cheese, cut up into small pieces
