THE "BETTER THAN TUNA" VEGAN CHICKPEA SALAD SANDWICH

The

You wouldn't think tuna salad would be something a person would miss after going vegetarian/vegan, but every now and then, I crave it, and I want something simple - no cooking required! This recipe is perfect for a picnic; quick lunch; or a fast, light dinner. Chickpeas resemble the texture of tuna when you pulse them in a food processor. Spread this on some toasted bread with green leaf lettuce or dip into it with crackers. The best part? It's cholesterol and mercury free and super yummy!

CHICKPEA SALAD SANDWICH

Sometimes you just want a simple, good sandwich that doesn't involve faux deli slices. I keep a tin of chickpeas on hand for just such occassions, and never make it exactly the same way twice...but this is generally a combo of ingredients and flavours I enjoy. I also like to add in a bit of flax oil, just to get my omegas in. Served on some toasted bread, this is a quick and satisfying lunch.

Tips:

  • Choose the Right Chickpeas: For the best texture and flavor, use dried chickpeas that have been soaked overnight and then cooked until tender. If you're short on time, you can also use canned chickpeas, but be sure to rinse and drain them well before using.
  • Add Some Crunch: To add some crunch to your chickpea salad sandwich, try adding chopped celery, carrots, or red onion. You can also add a handful of chopped nuts, such as almonds or walnuts.
  • Make it Creamy: If you prefer a creamier chickpea salad sandwich, try adding a dollop of Greek yogurt or mayonnaise. You can also add some hummus or tahini for a more Mediterranean flavor.
  • Season to Taste: Be sure to season your chickpea salad sandwich to taste with salt, pepper, and your favorite herbs and spices. Some popular options include cumin, coriander, paprika, and garlic powder.
  • Use Fresh Bread: For the best sandwich experience, use fresh, high-quality bread. A sturdy bread, such as sourdough or whole wheat, will hold up well to the chickpea salad.
