3 dried chipotle chiles
1/4 cup sugar
1 tablespoon water
2 garlic cloves, minced
1/4 cup plus 1 tablespoon fresh orange juice
2 tablespoons Champagne vinegar

Steps:

  • Preheat oven to 300 degrees. Bake chiles until fragrant and softened, about 5 minutes. Let cool for 2 minutes. Stem, seed, and break into small pieces.
  • Combine sugar and water in a small saucepan, and set over high heat. Cook, without stirring, until mixture begins to turn gold around edges of pan. Continue cooking, swirling pan, until mixture is light gold. (Do not let caramel darken, or it will result in a bitter marinade.) Immediately add garlic and cook, stirring, for 30 seconds.
  • Remove from heat, and stir in chiles. Stir in orange juice and vinegar, set over medium heat, and cook, stirring constantly, until syrupy, about 2 minutes. Use marinade immediately.
  • If desired, turn marinade into a finishing sauce: After removing meat, pour marinade into a nonreactive saucepan, and boil for 3 minutes. Brush on cooked meat just before serving.

6 limes, juiced

3 dried ancho chilies
2 tablespoons white distilled vinegar
2 garlic cloves
2 whole cloves
1/2 teaspoon ground oregano
1/4 teaspoon ground cinnamon

4 4-ounce boneless pork loin chops
1 tablespoon vegetable oil

Steps:

  • Heat heavy large skillet over medium heat; add chilies. Using spatula, press down on chilies until beginning to soften and darken, about 2 minutes per side. Transfer chilies to work surface; cool. Cut chilies in half lengthwise; remove seeds and stems and discard. Place in bowl. Add enough boiling water to cover; let stand until chilies soften, about 1 hour.

An authentic Colorado family chili recipe I grew up eating. Everyone who eats my chili wants my mom's recipe. A flavorful tender pork chili simmered to bring out the flavor. Enjoy the chili with flour tortillas and fried potatoes. Or pour over chicken enchiladas, beef enchiladas, burritos, or tamales. Chili is always better the next day; I like to make this chili the night before so the flavors blend together.

¼ cup all-purpose flour
1 ½ pounds boneless pork shoulder, cut into 1/2-inch cubes
¼ cup canola oil
2 (32 fluid ounce) containers chicken stock, divided
1 (14.5 ounce) can diced tomatoes
1 (4.5 ounce) can diced green chile peppers
1 (4.5 ounce) can diced jalapeno peppers
2 cloves garlic, minced
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon garlic salt
½ teaspoon ground cumin
⅛ teaspoon ground black pepper
2 tablespoons cornstarch
¼ cup cold water

Steps:

2 tablespoons rice wine vinegar
1 1/2 tablespoons soy sauce
3 garlic cloves, finely grated, divided

1 1/2 tablespoon hot chile paste, such as sambal oelek
3/4 teaspoon kosher salt
2 pork tenderloins (each about 1 pound)
2 tablespoons fish sauce
2 tablespoons lime juice

1/2 to 1 red Thai chile pepper, very thinly sliced
1 1/2 tablespoons finely chopped roasted unsalted peanuts
1 1/2 pounds Brussels sprouts, trimmed and halved
3/4 cup low-sodium chicken broth or water

Steps:

Transfer pork to cutting board and let rest 5 minutes, and reserve skillet.
  • Add reserved marinade to the skillet and reduce over medium heat, stirring and scraping up the browned bits, until thickened to a pan sauce that coats the back of a spoon, 3 to 5 minutes. Remove from heat and whisk in butter. Taste and adjust seasoning.
  • To serve, slice pork and drizzle with pan sauce. Spoon Brussels sprouts onto plate, sprinkle with mint, and serve additional pan sauce on side.
