Time 1h

Yield 6

Number Of Ingredients 19

1 1/2 teaspoons olive oil
1/2 lb ground beef
1/3 cup chopped onion
1/4 cup chopped celery
1/4 cup chopped green bell pepper
1 1/2 teaspoons chili powder
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon dried oregano leaves
1/4 teaspoon sugar
1/2 cup tomato sauce
1 cup canned or fresh diced tomatoes
1 cup canned pinto beans, drained, rinsed
1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
1/2 cup shredded Cheddar cheese (2 oz)
1 egg
1 tablespoon water

Steps:

  • In Dutch oven or large saucepan, heat oil over medium heat. Cook beef in oil 3 to 5 minutes, stirring frequently, until it begins to brown. Add onion, celery and bell pepper. Cook about 5 minutes, stirring occasionally, until beef is thoroughly cooked and vegetables begin to soften.
  • Stir in chili powder, cumin, garlic powder, salt, pepper, oregano and sugar. Cook 1 minute. Stir in tomato sauce, tomatoes and beans. Simmer uncovered 15 minutes, stirring occasionally, until thickened.
  • Meanwhile, heat oven to 350°F. Remove pie crusts from pouches; unroll on lightly floured work surface. Using rolling pin, roll out crusts slightly. Using a bowl as a pattern, cut 3 large rounds from each crust; discard scraps.

SLOPPY JOE POCKETS

Sloppy Joe Pockets image

Provided by Patricia Heaton

Categories     appetizer

Time 1h35m

Yield 16 pockets

Number Of Ingredients 12

2 tablespoons vegetable oil
1/2 medium onion, finely chopped
2 cloves garlic, finely chopped
1/2 pound lean ground beef
2 teaspoons sloppy joe or chili seasoning mix
Kosher salt and freshly ground black pepper
2 tablespoons ketchup
2 tablespoons tomato paste
1 teaspoon Worcestershire sauce
2 tablespoons chopped fresh flat-leaf parsley
Two 8-ounce tubes crescent roll dough, unseparated
About 1/2 cup shredded sharp Cheddar

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat the oil in a medium skillet over medium-high heat. Add the onions and cook, stirring, until softened, about 5 minutes. Add the garlic and cook, stirring, until fragrant, 30 seconds. Add the ground beef, seasoning mix, salt and pepper, and cook, stirring and breaking up any clumps, until brown, 3 to 5 minutes. Add the ketchup, tomato paste and Worcestershire sauce and cook, stirring, 1 minute. Add 3/4 cup water and simmer, stirring occasionally, until most of the water has evaporated, about 4 minutes. Stir in the parsley and season with salt and pepper. Transfer to a bowl and let cool to room temperature.
  • Unroll the tubes of crescent dough but do not separate along the perforations. Pinch the seams of two of the triangles together to make a rectangle and then cut that rectangle off from the rest of the roll at the seam. Repeat with the remaining dough.
  • Lay the rectangles of dough out on a work surface and cut each in half to make 2 squares. You will have 16 squares. Put 1 rounded tablespoon of the sloppy joe filling in the center of each. Mound a rounded 1/2 teaspoon of Cheddar on top of the beef (there will be cheese leftover). Gather the edges of the dough up over the filing to make a little pouch and pinch to seal each edge. Arrange the pouches on a parchment-line baking sheet and mound a little cheese on top of each.
  • Bake the pouches until the dough is golden brown and cooked through, about 20 minutes. Serve warm.

CHILI PIE CASSEROLE

Chili Pie Casserole image

This is a good dish to prepare for a cool evening. Some people add a small can of mushrooms, but I like it without. I never heard of mushrooms in a chili pie before.

Provided by Miss Annie

Categories     One Dish Meal

Time 1h10m

Yield 6-8 serving(s)

Number Of Ingredients 12

2 lbs ground chuck
2 cans kidney beans, drained (or black beans or pinto beans)
2 cups onions, chopped
1 1/2 cups water
2 (12 ounce) cans tomato sauce
1 tablespoon chili powder
2 teaspoons brown sugar
1 teaspoon garlic powder
2 cups grated cheddar cheese
1 (10 ounce) package Fritos corn chips
cooking spray
1 tablespoon canola oil

Steps:

  • Preheat oven to 350°.
  • Brown meat and onion in Canola oil.
  • Drain.
  • Add tomato sauce, chili powder, brown sugar, garlic powder, and water.
  • Spray a 9 x 13 inch casserole dish with cooking spray.
  • Place a layer of meat mixture in bottom of prepared casserole dish.
  • Add a layer of beans, then a layer of Fritos and then a layer of cheese.
  • Repeat layers, except do not add cheese.
  • Leave last layer of cheese to top baked casserole.
  • Bake casserole 35 minutes.
  • Top with cheese& continue baking until cheese is melted& bubbly, about 10-15 minutes.

Tips:

  • Use high-quality chili for the filling. A good homemade chili or a store-bought brand that you enjoy will make all the difference in the flavor of the pie pockets.
  • Be careful not to overfill the pie pockets. Too much filling will make them difficult to seal and may cause them to burst open during baking.
  • If you don't have a pastry cutter, you can use two knives to cut the butter into the flour. Just be sure to work quickly so that the butter doesn't get too warm.
  • To make the pie pockets ahead of time, assemble them and then freeze them unbaked. When you're ready to bake them, just thaw them overnight in the refrigerator or at room temperature for a few hours.
  • Serve the pie pockets warm with your favorite dipping sauce. Some popular options include sour cream, salsa, and guacamole.

Conclusion:

Chili pie pockets are a delicious and easy-to-make snack or meal that are perfect for any occasion. They're also a great way to use up leftover chili. With a few simple ingredients and a little bit of time, you can have a batch of these tasty treats that the whole family will enjoy.
