3 tablespoons chili powder
3 tablespoons sugar
3 tablespoons seasoned salt
1 tablespoon garlic powder
1 tablespoon cumin
1 tablespoon dried marjoram
1 tablespoon cayenne pepper
½ cup cornmeal, or as needed

Steps:

  • Soak onions in water in a large bowl until the water takes on some of the onion flavor, at least 1 hour.

1 ½ cups chopped onion
2 potatoes, cubed
4 (15 ounce) cans kidney beans
4 (10.75 ounce) cans condensed tomato soup
8 cups tomato juice
3 teaspoons chili powder

Steps:

  • In a large pot over medium heat, combine the ground beef and onions. Saute for 5 minutes, or until meat is browned. My daughter named it "Football Soup" because we always make it when we have a crowd over watching the game after church! Incredibly easy, freezes beautifully, and my bean hating husband even loves it. I add an extra can of green chilies for more flavor. You can make it without the chicken for a cheaper meatless meal, and you can make it without the monterey jack cheese for a low-fat, less thickened soup (but the cheese adds a lot of flavor!)

2 medium onions, chopped
4 garlic cloves, minced
2 (4 ounce) cans chopped mild green chilies
2 teaspoons ground cumin

3 (16 ounce) cans great northern beans, undrained
6 cups chicken stock or 6 cups canned chicken broth
4 cups chopped cooked chicken, to taste

  • Heat oil in large pot over medium high heat.
  • Add onions and saute until translucent, about 10 minutes.

1/4 cup yellow onion, diced
1/4 cup carrot, diced
1/4 cup green bell pepper, diced
4 beef bouillon cubes
1 cup boiling water
1 1/2 quarts canned black beans, not drained (3 pounds)
2 tablespoons dry sherry
1 tablespoon distilled white vinegar
2 tablespoons Worcestershire sauce
1 tablespoon sugar
2 teaspoons garlic granules
2 teaspoons salt
1/2 teaspoon ground black pepper
2 teaspoons chili powder
8 ounces smoked sausage, small dice
1 tablespoon cornstarch
2 tablespoons water

Steps:

  • In a medium stock pot, place the olive oil, onion, carrot and bell pepper and saute the vegetables till they are tender.
  • Bring 1 cup of water to boil, add the bouillon cubes, and allow to dissolve.
  • Add the bouillon, cooked beans, and remaining ingredients (except cornstarch and 2 tablespoons water) to sauteed vegetables.

1 small onion , finely chopped
2 garlic cloves , finely chopped
1 tbsp vegetable oil
500g lean minced beef
410g can pinto or red kidney bean , drained
400g cans chopped plum tomatoes
700ml/1¼ pints hot chicken stock
large pinch of crushed dried chillies
2 squares of dark chocolate (try Lindt 85%)
fresh coriander or parsley leaves and some grated gruyère, to serve

Steps:

  • Gently fry the onion and garlic in the oil for a couple of minutes until beginning to soften, then add the mince. Raise the heat and cook for 5 minutes, stirring from time to time, until the meat is no longer pink.
  • Stir in the beans, tomatoes, stock, chillies, chocolate and plenty of salt and pepper. Bring to the boil, cover and simmer very gently for 1 hour, or longer if you have the time. (You can make it up to a day ahead to this point, then cool and chill.)
  • Ladle into mugs or large cups and scatter with herbs, cheese and black pepper. You'll need spoons to eat it.
