- Preheat oven to 350 F degrees. Add butter to small skillet and melt over MED heat. Add onion and cook 4-5 minutes, until soft and slightly browned on the edges, stirring occasionally. Add garlic and cook 1 minute. Set aside to cool slightly.
- Add diced bread pieces and milk to a large mixing bowl and stir to combine. Add beef, cheese, cilantro, minced chipotle peppers, chili powder, cumin, salt, pepper, beaten egg and cooked onion mixture. Mix together until just combined.
- Lightly spray a meatloaf pan with nonstick cooking spray. Pat meatloaf into prepared pan.
- Combine sauce ingredients in small bowl. Slather about half the sauce on the top of meatloaf, and bake for 60-90 minutes, until meatloaf is about 150-155 F degrees. Let stand 10 minutes before serving. Use the remaining half of the sauce to spoon over the top or dip the meatloaf in as you eat :)

- Preheat the oven to 350 degrees F. Line a baking sheet with foil and coat with nonstick cooking spray.
- In a large mixing bowl, using your hands, combine all the meatloaf ingredients; mix thoroughly. Transfer to the prepared baking sheet and shape into a loaf approximately 2 inches high by 4 inches wide, making it as uniform as possible. Smooth the top and place in the oven on the middle oven rack. Bake for 60 minutes; set a timer for 30.
- While the meatloaf is cooking, make the glaze. In a medium bowl, whisk together the honey, 2 tablespoons minced chipotle peppers, and vinegar.

- 1. Preheat the oven to 350. 2. Chop carrots add to large skillet with 3 tablespoons of oil and saute (they are going to take the longest to soften). 3. Chop red pepper and add to pan. 4. Chop celery and onion and add to pan. Season and saute for about 10 minutes until the vegetables are soft and have just hint of color. 5. Move the vegetables to a food processor until the vegetables are a fine mince, but not pureed. 6. In a large bowl, add Parmesan cheese, parsley, egg, garlic, sweet potato, thyme, pureed vegetables, ground beef, salt and pepper and 2/3 of the glaze. Mix well. 7. In batches, add to food processor and give it a couple of pulses to loose up the ground beef. 8. Press into a loaf pan and then turn the pan upside down on a baking sheet and remove the loaf pan. 9. Bake for 45 minutes. 10. After 45 minutes, coat with remaining glaze and increase the oven temperature to 425 and cook until internal temperature is 155 and glaze is golden brown and delicious (about 20 minutes). 11. Remove from oven and let it rest for 10 minutes.
