Tips:

  • Use fresh egg whites. Older egg whites are less stable and may not whip up as well.
  • Make sure your egg whites are at room temperature. This will help them whip up more easily.
  • Beat the egg whites gradually, starting on low speed and increasing to high speed as they begin to foam. This will help prevent them from curdling.
  • Add the sugar slowly, in a steady stream. This will help prevent the meringue from becoming grainy.
  • Continue beating the meringue until it is stiff and glossy. It should hold peaks when you lift the beaters out of the bowl.
  • Pipe the meringue into desired shapes onto a parchment paper-lined baking sheet.
  • Bake the meringues in a preheated oven at 200°F for 1-2 hours, or until they are dry and crisp.
  • Let the meringues cool completely before filling them.

Chocolate-filled meringues are a delicious and elegant dessert that can be enjoyed by people of all ages. They are perfect for a special occasion or a simple treat.
