2 licorice coins
1 rounded licorice button

Steps:

  • Place templates on sheet cakes, and cut out with a paring knife. Discard scraps. Halve snout and belly pieces horizontally, discarding bottom halves.
  • Arrange pieces into a bear shape, trimming sharp edges off shoulders, ears, and paws. Use chocolate frosting to attach pieces to one another.
  • Coat entire cake with frosting, rounding over the tummy and snout. Refrigerate until frosting is firm, about 30 minutes to overnight. Add a second smooth coat to snout, ears, and front paws. Fill a pastry bag fitted with a multiopening grass tip (Ateco #233) with frosting. Pipe fur on bear, skipping center of ears and front paws and entire snout, refilling bag as necessary.
  • Use licorice coins for the eyes, and licorice button for the nose.

BIRTHDAY CAKE WITH CHOCOLATE FROSTING

Birthday Cake with Chocolate Frosting image

Categories     dessert

Time 2h

Number Of Ingredients 16

Oil for brushing the pans
2 cups cake flour or 1 2/3 cups all-purpose flour, plus more for pans
1/3 cup cornstarch
2 teaspoons baking powder
1/2 teaspoon fine salt
1 1/2 cups plus 2 tablespoons sugar
1/2 teaspoon finely grated orange zest
1 cup (2 sticks) unsalted butter, at room temperature
1/2 cup milk, at room temperature
3 large eggs, at room temperature
2 teaspoons pure vanilla extract
1 1/4 pounds milk chocolate, chopped
12 ounces semisweet chocolate, chopped
1 16-ounce container sour cream (2 cups)
1 tablespoon coffee
1 tablespoon pure vanilla extract

Steps:

  • To make the cake:
  • Position a rack in the center of the oven and preheat to 350 degrees F. Brush two 8-inch round cake pans with oil, line the bottoms with circles of parchment paper, lightly brush the paper and pan with oil, and dust with flour.
  • Put the flour, baking powder, and salt into the bowl of a food processor. Add the sugar and orange zest and pulse a few times to combine evenly. Cut the butter into small pieces and add to dry ingredients. Pulse until the mixture looks like coarse sand, with some pea-size bits of butter, about 5 times.
  • Whisk the milk, eggs, and vanilla together in a liquid measuring cup. With the processor running, pour in the wet ingredients and process to make a smooth batter (this takes less than a minute). Divide the batter between the prepared pans and bake until a toothpick inserted in the center comes out clean, about 25 minutes.
  • Cool the cakes on a rack for 15 minutes. Then run a knife around the edges of the pans, turn the cakes out onto a plate, and peel off the paper. Flip the cakes upright and cool completely on the rack, about 45 minutes. (This is important-icing a warm cake is not a happy thing).
  • When ready to ice the cake, make the frosting:
  • Put the chocolates in a medium microwave-safe bowl. Microwave on medium for a minute, stir, and repeat until chocolate melts, about 3 minutes in all. (Or put chocolates in a heatproof bowl set over an inch or so of water at a very slow simmer; set the bowl on the pan; don't let the bowl touch the water. Stir occasionally until smooth.)
  • Let chocolate cool slightly. Stir the sour cream, coffee, and vanilla into the chocolates. Beat with a handheld electric mixer until frosting is silky and fluffy. (Spread frosting soon after making it; it firms up at room temperature.)
  • Set a large flat plate on a large inverted bowl or bottom of a salad spinner (of course, if you have a cake stand, use that). Dab a little frosting in the center of the plate and place a cake layer, top side up, on top. With an offset spatula, scoop about one-third of the frosting onto the cake and spread it evenly to the edge of the cake. Place the other layer on top and press down lightly. Spread another third of the frosting around the sides. Spread the remaining frosting on the top of the cake. Lightly touch the frosting with the back of a spoon to make swirly peaks. Serve immediately or set aside at room temperature for up to 2 hours before serving. If refrigerating the cake, bring to room temperature 30 minutes before serving.

Time 1h

Yield 12 to 15 servings

Number Of Ingredients 15

2 cups all-purpose flour
2 cups granulated sugar
1/4 teaspoon kosher salt
1/2 cup buttermilk
1 teaspoon baking soda
1 teaspoon vanilla extract
2 large eggs
2 sticks (1 cup) salted butter
4 heaping tablespoons cocoa powder
1 cup semisweet chocolate chips
4 cups powdered sugar
2 sticks (1 cup) salted butter, softened
2 tablespoons whole milk
Dash of kosher salt
1 vanilla bean, split and caviar scraped

Steps:

  • For the cake: Preheat the oven to 350 degrees F.
  • Add the flour, granulated sugar and salt to a large bowl and stir together; set aside. Add the buttermilk, baking soda, vanilla and eggs to a separate bowl. Mix with a fork and set aside.
  • In a medium saucepan, melt the butter. Add the cocoa and whisk to combine.
  • Meanwhile, bring 1 cup water to a boil. Pour the boiling water into the butter and cocoa pan. Allow to bubble for a moment, then turn off the heat.
  • Pour the cocoa mixture into the flour mixture. Stir together for a moment to allow it to cool slightly, then pour in the egg mixture. Stir together until smooth. Add the chocolate chips, stirring, then pour into an ungreased jelly roll pan (or rimmed baking sheet). Bake until an inserted cake tester comes out clean, about 20 minutes. Allow to cool for about 20 minutes.
  • For the frosting: While the cake bakes, combine the powdered sugar, butter, milk, salt and vanilla bean caviar in a large bowl. Using a hand mixer, mix on low until incorporated. Increase the speed and mix until light and fluffy; set aside.
  • Spread the top of the cake with the frosting, slice and serve.

Tips:

  • To achieve a smooth and lump-free frosting, it's crucial to sift the cocoa powder and powdered sugar before combining them. This eliminates any clumps and ensures a velvety texture.
  • For a decadent chocolate frosting, use high-quality cocoa powder. Look for brands with a rich and bold flavor profile.
  • Adjust the texture of your frosting by controlling the amount of milk or cream added. Adding more liquid results in a pourable frosting, while less liquid yields a thicker, spreadable frosting.
  • For a glossy finish, stir in a tablespoon of corn syrup or light corn syrup. This ingredient adds shine and helps prevent the frosting from becoming dull.
  • To elevate the flavor of your frosting, consider adding a touch of vanilla extract, espresso powder, or cinnamon. These ingredients complement the chocolate and enhance its taste.

Conclusion:

With its rich chocolate flavor, velvety texture, and versatile applications, this chocolate frosting is a culinary delight that will elevate any cake, cupcake, or dessert. Whether you're a seasoned baker or just starting out, this recipe offers a straightforward approach to creating a delectable treat that will impress your friends and family.
