CHOCOLATE CHIP BANANA NUT BREAD
A recipe (originally by Ann Tremont) my mother put in a cookbook that I have modified quite a bit. Every time I bring this to work, everyone wants a piece (and there's not enough to go around).

Steps:
- Hand mix flour, baking powder, baking soda, sugar, walnuts, chocolate chips, and vanilla extract in mixing bowl until chocolate chips and walnuts are evenly spread out throughout mixture.
- In another bowl, mash bananas and add to the main mixing bowl.
- Soften the butter (I microwave for 20 seconds) and add to the main mixing bowl.
- Add two whole eggs to main mixing bowl.
- Mix all ingredients together by hand until it has a batter-like consistency.
- Pour into greased loaf pan.
- Let mixture set for at least 20 minutes before baking (Preheat the oven to 325°F).
- Bake at 325°F for 65 minutes (may take longer depending on the oven and altitude).
- When finished baking, it is best to let it set overnight before serving.

- An optional recipe: Instead of the chocolate chips, use 1 1/2 tsp of cinnamon to make Cinnamon Banana Nut Bread.
FESTIVE RUM RAISIN CHOCOLATE CHIP BANANA NUT BREAD
A festive banana bread with rum soaked raisins, chocolate chips and walnuts. Easy to make and delicious.

- 1. Combine rum and raisins. Let stand 15 minutes; drain and reserve liquid.
- 2. Cool melted butter to room temperature.
- 3. Combine dry ingredients; set aside.
- 4. Combine sugar, bananas, butter, egg and milk; beat well. Gradually beat in flour mixture.
- 5. Stir in raisins, chocolate chips and nuts.
- 6. Bake at 350 degrees in a greased and floured loaf pan for 45 to 50 minutes. Poke holes in top of bread with a toothpick. Brush with reserved liquid.
EASY BANANA BREAD - CHOCOLATE NUT
A fairly easy banana bread that uses a the creaming method for a lighter texture. Not cake-like, but not as dense as some quick breads.

- Move your oven rack so that the top of the loaf will be in the center of the oven. Heat the oven to 350ºF. Grease three loaf pans with with shortening. Line with parchement if desired.
- Cream sugar and butter in a large bowl unitl light and fluffy.
- Stir in eggs until blended.
- Add bananas, milk, and vanilla. Beat until smooth.
- Mix remaining dry ingredients in ziplock bag and gently combine with banana mix. Stir in nuts and/or chocolate.
- Divide into 3 pans (about 1000 gms per pan). Bake for 1 ¼ hours (until toothpick inserted into the center comes out clean).
- Cool 5 minutes on wire rack still in pan. Then remove from pan and place top side up. Cool completely before slicing. Wrap tightly and store a room temperature for 4 days or in the refrigerator for up to 10 days.
CHERRY NUT CHOCOLATE CHIP BREAD
An easy to make, delicious bread that tastes like cake. A great bread for Christmas.

Steps:
- 1. Put butter and sugar in a large mixing bowl and beat with an electric mixer on medium speed for 3-4 minutes.
- 2. Stir in buttermilk, eggs and almond or vanilla extract; mix well.
- 3. Combine dry ingredients. Add to the buttermilk mixture; stir just until dry ingredients are moistened.
- 4. Stir in cherries, chocolate chips and nuts.
- 5. Grease and flour bottom only of 9 X 5 inch loaf pan. Pour batter into prepared pan.
- 6. Bake in a 350 degree oven for 55-65 minutes.
- 7. Let cool in pan on wire rack 10 minutes and remove from pan. Cool.
- 8. Wrap and store in refrigerator.
- 9. To toast nuts: Spread nuts in an ungreased pan. Bake in a 350 degree oven for 5-7 minutes, stirring occasionally, or until brown.
BANANA NUT CHOCOLATE CHIP BREAD
